Lol… The rice cooking step is so basic for every Asian that we are so shocked when BBC food teach westerners to cook rice like to boil a pasta… And not to mention the pathetic induction stove, only stove with huge flames makes good fried rice.
I love how different chinese cooking is to western like french, italian, slavic whatever else influences the majority of what I've seen over the years. I think it must be a by product of feeding many people on limited resources, ie fuel and meats. Really enjoying your channel though, makes me want to go get a proper wok setup and learn more chinese recipe
I think it's important to note here that cuisines can change surprisingly quickly. For a very long time, bread and other starches were by far the most important contributor of calories in these cuisines you just mentioned. It is probably only fairly recently when they adopted a more "meat-centric" diet.
I think the development of society also influences the way the food is cooked. Food is more communal and less processed in places that are less industrialized as say US. Couple decades ago, TV Diners was a thing and now cooking meal kits (half processed) are popular. So, I think depending the state of the society, the food industry have to cater to the pace and preference of the population. In China, people use cook actual meals during lunch (less so these days ) whereas here people grab and premade cold cut or go to a drive through. People here rarely cook from scratch and it shows in the western grocery store. Majority of things are in packages. Different cultural backgrounds here.
That's what I notice too. When I make fried rice, I usually put slices of ham into it. It feels like I am eating way more ham than the amount of ham I put, especially when compared to how fulfilling I can get by eating a ham sandwich with the same amount of ham.

為了防止炒飯炒爛,最重要的是要把炒飯炒的燙了以後才加入鹽或醬油,如果鹽或醬油在飯還沒有熱的情況下就加進去了,就會炒爛

@@破名 会但主要还是跟两个因素有关。1)饭本身要干硬一些。2)冰箱自有干燥功效,饭放冰箱久了也会干一些,合适做炒饭
