    Peas Pudding in Pudding Bag:
    Recipe:
    1 chuck ham, salt beef or salt pork riblets ¼ medium onion
    ½ bag yellow split peas 1 tbsp butter
    ½ tsp pepper 1 tsp sea salt
    4 cups water, more if needed
    Method:
    You will need one cotton pudding bag with string, saucepan or boiler, soaked salt beef or salted riblets, or a chunk of ham.
    Then add ½ bag of yellow split peas to a pudding bag tied with a string, place in a bowl with 2 cups cold water and soak overnight, keep on the counter top or in the fridge, “keep pudding bag inside the bowl so it doesn't release water.
    ” Next day, remove pudding bag with soaked peas from water, then discard water.
    Add 2 cups of cold water to saucepan or boiler start cooking on a medium heat with ham, salt beef or salted riblets.
    “ If you are using salted beef you will need to part cook it for one hour and discard water, top with more water and add the peas pudding bag to start cooking peas pudding.
    Tie pudding bag on to the side of saucepan or boiler to stay in place while cooking, add ¼ piece of onion with the chuck of ham, salt beef or riblets, cook for one hour checking the saucepan for more water if needed.
    Remove pudding bag from pot then cut the string from bag, removing all liquid from cooked peas pudding by twisting the bag tight to remove liquid, then pour all peas into a bowl, mash with butter and pepper to taste.
    Peas Pudding in Saucepan:
    Recipe:

    ½ tsp pepper 1 tsp sea salt
    4 cups water, more if needed
    Method:
    You will need a saucepan, soaked salted beef or riblets, or a chunk of ham.
    In a medium saucepan add ½ bag yellow split peas and 2 cups cold water, soak overnight on the countertop or fridge.
    The next day, remove water and replace with 2 cups of cold water, ¼ piece of onion, chuck of ham, 1 tsp sea salt.
    “ If you are cooking with salted beef or salted pork riblets don’t use sea salt.
    Cook salted beef or salted pork riblets one hour before adding the yellow split peas to fresh water with beef. “
    When a saucepan with soaked peas starts to boil, stir occasionally so it doesn't burn to the saucepan, only add more water if split peas are not cooked enough, then only add about ¼ cup of water at a time. After 45 minutes with split peas cooking and all water is gone and peas are thickened, add butter and pepper stirring it in to make it creamy, leaving ham or salted beef in with the peas.
    Bonita’s Tips: - Serve with boiled dinner, jigs dinner or cooked veggies, or on its own.
    When at room temperature put in container with cover and put in fridge up to 9 days.
