Thanks for your version of this viral recipe. You definitely upgraded it! I finally took your advice to use Guittard Cocoa Rouge. Game changer!!! I prefer the pudding unfrozen version, plus you don’t have wait! I’ve also made your easy non-dairy and regular chocolate pudding recipes. With the cottage cheese version, I could still detect a bit of the twang of the cottage cheese. It was OK, but I think cottage cheese pudding would shine in recipes that include some lemon giving a cheesecake flavor and perhaps adding blueberries and strawberries. Your pumpkin mousse recipe is another of my favorites.

I've had the same experience with putting the ice cream in the freezer for that long. Even after three hours, it starts to get too icy and hard. I prefer the pudding.
Excellent stuff, thank you. My creami machine broke after I attempted to run some overly solid frozen protein shake. This is simpler, and you don't have to wait a fricken day to have the ice cream.

I made this over the weekend and I loved the pudding! I didn't make it into ice cream because the pudding just looked so good. The peanut butter was such a great idea! I love those flavors together. I shaved chocolate on top and added slivered almonds. Soooo good! Thanks Robin! Also, your jokes were really good this week 😂 Thanks again!

Your jokes are too funny and recipies are good ideas. I have been doin cocoa powder and cinnamon and stevia in greek yogurt, good protein and it wont blow my sugar high. Plus i am trying other things. All of this is fun ❤❤
Yum! You can actually make your own cottage cheese using vinegar water on the stove & milk. It's easy! Sometimes it turns out kind of like ricotta though.
I wonder if you add a bit of alcohol to the ice cream? Maybe Baileys Irish Cream or some other flavored liquor. De Kuypers Butterschots tastes like caramel when you mix it with chocolate. I might try this.😊
If you haven't had the real thing in years and are desperate, you night enjoy this. But I tried it and it's awful. I almost tossed it. If you like over salted ice cream, eat it. Bon Appetit! What I did to salvage the nasty stuff that was made with cottage cheese, strawberries and blueberries, supposedly a wonderful recipe, is make another batch of REAL vanilla custard Ice cream using my usual allulose sweetener. Omitted the salt entirely and added the Cottage Cheese ice cream to it to melt. That gave it the right amount of salt with a little cheesecake twist to it. That was exactly enough for 2 batches of delicious ice cream. Cottage cheese ice cream is way too salty. You will get a better ice cream using yogurt.
I haven’t tried making this yet, but some keto TH-camrs said vodka did not work in this case. Did it work for you? They had success using allulose. Maybe 1/2 maple syrup, 1/2 allulose?
@@clicquot2271 I have not tried it using this recipe. I also have not tried allulose. It would be worth trying otherwise you can just let the ice cream version sit out 15 - 20 minutes to soften.
Robin has a nondairy chocolate pudding recipe from about a year ago. It uses coconut milk and coconut sugar along with cocoa powder and vanilla. I have made it, and it is easy & delicious! Title: “Easy non-dairy chocolate pudding: the best recipe ever”

I used cacao nibs. And your 1/4 cup maple syrup. Plus 1/4 tsp vanilla. Food processor... nice pudding, with tiny cacao flakes

It's icy because it doesn't have enough fat in it, or an emulsifier. The low fat content of cottage cheese is like ice milk.
