I grew up chinese and there are things i will admit. Viets make better spring rolls, koreans make better zhajiangmian and georgians know how to make a better soup filled dumplings
Well that’s your opinion. I do think that the use of rice noodles and lettuce wraps makes veit roll a bit better. But when it comes to zhazhiangmian, I think it’s more preference to what kind of flavor you enjoy more. The Chinese has a more meaty taste to it while the Korean version has a more bean paste taste. I prefer the former. When it comes to dumplings, I’ll say I prefer a thinner skin and a richer brother. Georgian soup dumpling tends to be thicker skin and a more light broth, not fatty, and just more light if you know what I’m saying. I prefer the former. I think NYC/Seattle/Cali have some great place that sells soup dumpling and the pan fried soup dumplings outside of China/Taiwan.
Never heard of them but craving them now that I know they exist! 😋 I can't wait to try making them, especially because I ❤ making the East Asian style dumplings they resemble too. This is such an underrated channel!
There is no tradition such as leaving top part of khinkali and not eating them. Some people like to eat it and some don’t, so another time if you want to eat top part too don’t be fooled by some people who’ll say you mustn’t eat it

I have had them at our now Defunct Russian House in Austin, TX. I have also had the Afghan version (mantu) in Bloomington IN. They are my favorite food in the world and I have no way of eating it! 😢
Yeah same feeling. Xiaolong bao has thinner skin, more twists (18 at least), more fillings and different technique to seal the top. Chinese do not seal by twisting the extra top one off - they simply pressed without removing the extra dough. Curious how Khinkali tastes though since the skin looks thicker
Not chinese, mongol influenced. But they taste nothing like asian cousin. Im a huge fan of chinese taiwanese japanese korean etc food, but if you yourself try georgian food, not only khinkali you’ll be amazed why not every high end restaurant offers georgian food. Im a foodie, and i cook quit well, nothing can come close to feeling of georgian food. While eating , after taste and after feelings are magical.
They do taste good; I had them in St.Petersburg, Russia, Odessa, Ukraine, and Riga, Latvia. However Taiwanese version of dumplings taste much better with shrimps, chive, pork, and soy sauce inside. I wish Georgians can try the Taiwanese dumplings.
to be honest this is not an authentic xinkali, the real deal is either eaten with vinegar or garlic water you bite it drink the soup and pour the vinegar or garlic water inside or just do it straight up, that the og way of eating
Just been in Georgia for a few weeks. we had different khinkali in different regions but to be honost it is not that special. Georgians cuisine doesnt consist of high seasoned dishes. The asian type of dumplings are much better with more flavor. The georgian one are a bit blend. Still they go great with a beer.
