How to brew tea using Gaiwan Method (蓋碗) 🍵 | White Peony Tea 💮🍃| My Way

  • 📌 Hello everyone, this is a video on how to make white tea using the Gaiwan method/technique (蓋碗). A gaiwan ("covered cup" teapot) allows for re-infusion of tea leaves many times, so they are most commonly used for oolong, green, white, and puer teas (black teas are less likely to retain their flavor in subsequent steepings).
    For white tea, you can brew 3 times, first brew for 1 minute, second brew for 5 seconds and third brew for 10 seconds [start counting from the start of the pour]. We used water at 90°C.

    ⏱️ STEP-BY-STEP GUIDE

    FIRST BREW:
    1. Prepare 5g of white peony tea leaves (1:20 ratio - 5g for 100ml gaiwan)
    2. Boil water to 90°C
    3. Pour water over the gaiwan to warm it up and throw the water away
    4. Put in the tea leaves (leave it for approx. 5 seconds to warm it up as well)
    5. Rinse the tea leaves pour at the side/wall of the gaiwan without touching the tea leaves to avoid sudden heat exposure and flavour leak and throw the water away
    6. Pour 100ml of water (until full)
    7. Cover and wait for 1 minute
    8. Serve and enjoy!
    SECOND BREW:
    1. Boil water to 90°C
    2. Pour 100ml of water (until full) and count 5 seconds from the start of the pour
    3. Serve after finished counting (usually straightaway after pouring).
    THIRD BREW:
    1. Boil water to 90°C
    2. Pour 100ml of water (until full) and count 10 seconds from the start of the pour
    3. Serve after finished counting.

    How about using V60 to brew tea? I find I can less contact time and therefore less bitterness, 4 very sloe pours with a short break in between

      We have considered using V60 Switch to brew tea, however any other standard V60 will not fully extract the tea simply because the contact time is too short (due to the larger size of tea leaves compared to coffee grinds). But if it works for you, that's great! :)
