    Hussey, I took the plunge! I bought a Blackstone (17"), set it up yesterday, going to season it this morning, then breakfast for lunch, steaks for dinner. You're my inspiration.

    The tricks to cooking crispy hash browns, and I worked at a very popular breakfast restaurant here in the Wayne County(ENC Area)... the one thing you can easily get is the butter flavored oil Whirl..put that down then put the potatoes on that...then squirt more whirl on top...the most important part is to not touch them for a while...can't give a time because it is all depends on the temp of the griddle. When you flip them try not to separate but rather in sections.

      dude has it up top! or shred the potatoes and hit with salt and wait a couple mins, put in a towel and wring the ever living daylights out of them of the starch and moisture. could also par cook them for faster cook times. keep up the home cooking fella cause your only going to get better.

    Cooked at the Waffle House during high school (20+ years ago). The flat top temperatures were set differently for the different cooking zones of the grill in accordance with the Grill Operator's Manual. The left side (the side that the hashbrowns are always cooked on) is always the hottest. Add a ladle of Flavor Fry and dump your hashbrowns on it and leave them alone for about 4 1/2 or 5 minutes. Flip when you flip your bacon (which is always cooked with a press at the WH and is cooked on the medium heat zone of the flattop (middle). Chicken sammiches and Pork Chops are cooked under a dome. Pie is heated up on the flat top with ice under a dome.
    So for Waffle House hashbrowns, use reconsituted potatoes, use an oil mixture like Flavor Fry or Koala, crank the heat, dump them and leave them alone for 5 minutes before you flip. Don't add any more oil after the flip. Then leave them for another 3-4 minutes before you top with american cheese.
    Also, you don't need two spatulas but just a spatula and a scraper. Scraper cleans the flattop quickly with just a little water. Standing oil and grease that doesn't make it down the trap will burn and smoke. Use the scraper to completely clear the flattop of standing oil and grease. Spray a little water on there and scrape again. Then it's donesky.
    You're welcome everybody.

    Shred your own potatoes into a clean tea towel. Then squeeze and wring out as much liquid as you can. I also put them in a collinder for about ten minutes to allow them to drain.
    Then try cooking them. The more moisture you can get out, the better your hash Brown's will be.

      @thehungryhussey  3 ปีที่แล้ว

      I've tried shreading my own and I like the dehydrated ones probably better.

    What kind of oil are you using? What does it mean when food sticks. What to do?

    • @thehungryhussey
      @thehungryhussey  3 ปีที่แล้ว

      Food shouldn't stick too much really. I like to use olive oil or clarified butter.

  • @cheffietube7138
    @cheffietube7138 5 ปีที่แล้ว +9

    Nope! Most places use clarified butter and they dont flip them as much. Let them get crispy then flip.

    I just got my blackstone last week. I'm trying to get it seasoned properly. Yours looks pretty good on mine I just cooked on it once. When I use the spatula n scrap the top it chips away at the black color of it or what I would assume the season part. Is that extra grease that should come off? Should it be black and not chip away if I use the spatula to scrap n clean it?

    • @thehungryhussey
      @thehungryhussey  5 ปีที่แล้ว

      It shouldn't chip, but can after some neglect, but you shouldn't be seeing that so soon though.

    I alway chop up an onion and sweet pepper and add it to my hash browns. But cook your bacon first and use the grease for everything else.
