    Cooked at the Waffle House during high school (20+ years ago). The flat top temperatures were set differently for the different cooking zones of the grill in accordance with the Grill Operator's Manual. The left side (the side that the hashbrowns are always cooked on) is always the hottest. Add a ladle of Flavor Fry and dump your hashbrowns on it and leave them alone for about 4 1/2 or 5 minutes. Flip when you flip your bacon (which is always cooked with a press at the WH and is cooked on the medium heat zone of the flattop (middle). Chicken sammiches and Pork Chops are cooked under a dome. Pie is heated up on the flat top with ice under a dome.
    So for Waffle House hashbrowns, use reconsituted potatoes, use an oil mixture like Flavor Fry or Koala, crank the heat, dump them and leave them alone for 5 minutes before you flip. Don't add any more oil after the flip. Then leave them for another 3-4 minutes before you top with american cheese.
    Also, you don't need two spatulas but just a spatula and a scraper. Scraper cleans the flattop quickly with just a little water. Standing oil and grease that doesn't make it down the trap will burn and smoke. Use the scraper to completely clear the flattop of standing oil and grease. Spray a little water on there and scrape again. Then it's donesky.
    You're welcome everybody.

      Steven Williams he wasn’t using a spatula those are actually called flippers or turners. A spatula is usually rubber and has the shape of the letter D sorta, it’s to scrape like frosting from a bowl. Don’t worry I always called what he was using a spatula also I was 40 years old when I found out that those ain’t spatulas at all, all these years we were told WRONG!!!! Damn REPUBLICANS!!!

    Regarding the hash browns - just put them in a kitchen towel or cheesecloth and squeeze as much water out before you cook them . You will be amazed at how nicely they crisp up for you that way.

    The tricks to cooking crispy hash browns, and I worked at a very popular breakfast restaurant here in the Wayne County(ENC Area)... the one thing you can easily get is the butter flavored oil Whirl..put that down then put the potatoes on that...then squirt more whirl on top...the most important part is to not touch them for a while...can't give a time because it is all depends on the temp of the griddle. When you flip them try not to separate but rather in sections.

      dude has it up top! or shred the potatoes and hit with salt and wait a couple mins, put in a towel and wring the ever living daylights out of them of the starch and moisture. could also par cook them for faster cook times. keep up the home cooking fella cause your only going to get better.

    You can buy dehydrated hash browns at a survival type food store online. Use cold water and let them sit overnight. Turn the heat blazing hot like you are cleaning the grill and use the cooking oil with butter in it.

    I just got my blackstone last week. I'm trying to get it seasoned properly. Yours looks pretty good on mine I just cooked on it once. When I use the spatula n scrap the top it chips away at the black color of it or what I would assume the season part. Is that extra grease that should come off? Should it be black and not chip away if I use the spatula to scrap n clean it?

    • @thehungryhussey

    I need to find me one of these grills. Out in the country in eastern KY, with a family of kids or guests, this makes sense. I bet there's no feeling like cooking meals on your back porch.

      Hasbrowns will take a bit of time and patience. When I was starting out it was tough too as I would want to flip them too soon.
      Definitely want to start the hashbrowns off first.

      The griddle top will need to be around 350°

    I buy the dehydrated potatoes at Costco. They come in small cartons in packs of 6 or 8, I’m not sure
    . You add hot water and close the carton up and let the potatoes absorb the water. They are good.

    Put your hashbrowns in a cheese cloth, grab all four corners at the same time with one hand then start twisting. Do that to force the moisture out of the potato. Put them on your cooktop after getting all the moisture out and let them cook for 10 minutes without stirring them. Use something to cover them to hold heat in. Then flip them. That's how I do them in a skillet and they get restaurant crispy

    They use dehydrated hash potatoes like most low end restaurants, Denny's, Shari's, etc. They rehydrate them hours before by adding water. The only purpose is to store them as dry storage. FRESH is way better, did some cooking for a community college many years ago, had to show up at 3:30am to start the prep, had to make more than 50lbs of shredded potatoes and I'll tell you the students LOVED it but didn't know why they were better than dennys. FRESH.

    Denny Daniels I have had my 28in griddle for 3 yrs now. Every year I put some kind of oil on it for the winter. And every spring I spend at least 2hrs. reconditioning it. grinding the rust off and resurfaceing it. WHAT CAN I DO TO NOT HAVE TO DO THIS EVERY YEAR???????? I"M ABOUT READY TO GET RID OF THE STUPID THING.

    • @thehungryhussey
      @thehungryhussey  5 ปีที่แล้ว

      That’s tough. Letting metal go all winter without cooking on it and applying oil regularly. I know it’s difficult in some places with harsh winters though.

    I tried to do this and messed up the entire meal on my new 22 blackstone adventure ready. 😞. I can't figure out the temperature control. Had it on low and I felt it wasn't hot enough. Turned it up and it burned everything. Tried using a temp gun and I noticed Even on low the temp was getting close to 500* F and sometimes higher. And when I would put stuff on it, I'd see the temp drop under 300* F. Pancakes came out raw, eggs and sausage burned lol. I then made some brats and the outside burned but they still tasted great. Finally, I made smash burgers and they came out OK. But the temperature changes easily and I'm not understanding how you can throw one thing and another and another and it all seems to cook perfectly lol

    • @thehungryhussey
      @thehungryhussey  2 ปีที่แล้ว +1

      Those 22s can run hot. These older models they ran pretty even and didn't get too hot. Newer models run hotter and I what I do is cycle the burners on/off to get the right temps. Sometimes it's a struggle I know.

    • @EricGonzalez-bd1qd
      @EricGonzalez-bd1qd 2 ปีที่แล้ว

      @@thehungryhussey I tried to turn the burner off too in order to control the temp but it would cool way too fast and then it would be difficult to get the burner to ignite again. I think I need to adjust the needle. Anyway, thanks for the reply. I'll keep trying! I've got alot of food to make (or burn) but the learning process will be fun either way lol
