"Candy (not candied how it suppose to be but black folks never say candied, it's candy lol) Yams" are the sub-mashed version of Yams, Quang. This includes normally other optional bits on top, "marshmellows"/Brown sugar crumble etc. I will say, for the mac and cheese you gotta back up a bit off the watery cheese sauce. Most black folk mac n' cheese is baked to perfection AND don't be that guy when it comes to baked where you put absurd amounts of bread crumbs on top. Baked mac just needs to be nice, thick, cheesy w/ no crumbs. Just that lovely baked cheese crust that comes on it's own. No one like that at potlucks/BBQs, trust me i'm telling you.
I think that it all depends on which bread crumbs you use. I like the Progresso Italian seasoned bread crumbs the best because it has more flavor than any other bread crumb that I have tasted.
