00:00 🧀 Cheese is a great protein source, almost like a probiotic, and low in lactose, making it keto-friendly.
00:26 🐐 Focus on sheep and goat cheese with A2 casein for better digestion, as consumed by some of the oldest people in the world.
01:21 🥛 Sheep and goat cheese have minimal lactose (0.5%), reducing issues with lactose intolerance and providing various health benefits.
01:49 🧠 Nearly 20-30% of fat in sheep and goat cheese is MCT fats, converting quickly to ketones for energy, lessening stress on digestion.
02:16 🌍 Choose cheese from high-altitude locations like the Swiss Alps for increased polyphenols, triggering mitochondrial uncoupling for potential weight loss.
03:11 🏋‍♂ Mitochondrial biogenesis, stimulated by polyphenols, can lead to increased energy expenditure and potential weight loss.
04:05 🌿 Besides cheese, other ways to stimulate mitochondrial uncoupling include exercise, cold therapy, fasting, and phytonutrients from various foods.

Lactose isn't necessarily the problem. The problem is likely people having reactions to dairy products made with the A1 protein and presuming it was lactose hurting them. Now I'm not saying nobody on the planet has a problem with lactose. Just saying that I think there's a lot of confusion that could be cleared up.

Minor technical correction: you are correct about higher altitude grazing increasing polyphenols, but it is not because of closeness to the sun; higher altitudes are not significantly closer to the sun! The distinction is that higher altitudes have less atmosphere to filter the sun's influence on plant growth. 🙂

Only sort of: one of his skills is in providing frequently complicated info in ways that are more easily understood and accepted by the average non-medically oriented person. Sometimes he slips up and makes minor slips like this. It simply adds to exposing him as being human just like the rest of us.
My only professional criticism is that he often uses anecdotal personal experiences without putting them in the context of being examples of the established research. An acceptable statement might be in the form of "The research says this, and I've found it applies to my own personal experience as well as to that of some of my patients."

Interesting, partly we live in Kenya on 2000m altitude. Never heard of the high altitude benifits before. Very interesting information. The fast maraton runners from Kenya and Ethiopia are born and raized on high altitude. Always thought that the low oxygen level is what helps them. Because of this video I belive the high altitude diet might play a role aswell.

I’m fortunate, living in Devon in the UK, to have access to superb local cheeses made by artisans, and the best grass fed beef, lamb and proper organic free-range chicken and eggs. A weekly organic veg box scheme, and the local fish market means we have just some of the best ingredients. Sure, it costs more, but I’d rather compromise in other areas (we don’t have smartphones or expensive streaming subs, games packages etc). Wholesome natural food. Truly, cheese, butter, yoghurt, some of God’s greatest gifts to us

I live in the UK and I eat extra mature cheddar every day. Haven't liked any of the goats cheeses I've tried. I also eat Greek yogurt and grass fed butter. I've been adding more nutritious foods in recent years such as 1-2 brazil nuts, dark organic chocolate, seaweed, nutrional yeast, black pepper, Himalayan pink salt, tumeric and green tea to name some. I cut out sodas years ago and only drink fruit/herbal/black teas, water and occasionally diluted fruit juices and coffee. My diet isn't perfect but it's getting better. Bought some cloves this week for the first time. Onwards and upwards! Thank you for all your advice, it is very much appreciated 👍

I am so afraid of dairy for health but I love it. There has definitely been a war on dairy in most natural health circles due to it contributing to so many chronic diseases and inflammation. I’d love to hear more videos on cheese about all this. I want to love and trust and eat cheese - but it seems risky if you are trying to heal autoimmune. I’d love to know more about your thoughts on this? Is it true cheese is best avoided when trying to heal conditions, or is this an unnecessary war on cheese that we’ve been fed?
