I just made these and they are incredible! I made one half batch ginger flavor and one half almond flavor (with almond extract) I topped them with pecans and cranberries. My friend who is a vegan made a batch with a chia egg instead of a real egg and they were tasty too but a lot harder and drier.
Hi Liezel, Thanks so much for this recipe and video. I made these cookies for my playgroup Christmas party and they came out so nice! I altered the recipe just slightly (1/4 cup of olive oil and 1/2 cup coconut oil; simply cause coconut oil here is a bit expensive. Also substituted 1/4 cup of almond meal and 1/4 cup of buckwheat flour (GF) instead of all rice flour, to make the cookies a bit lower GI, and I imagine you could substitute a bit more of the rice flour for almond meal and buckwheat if you wanted them to be even more low GI. But I don't know at what point the consistency/flavour of the cookie would change so I just kept the substitution low at this point. Might try different proportions in my next batch, as that would make these cookies more suitable for diabetics. I also used some raw honey instead of maple syrup as I didn't have any maple. I also rolled out the dough and cut it into Christmas shapes; trees, stars and circles. I was worried it might not stick together enough for the shapes to stay in tact, but it actually sticks together really well! (Raw dough was about 8mm thick). I just had to use a metal spatula to get them up off the bench and carefully slide them onto the trays with a knife as to not mess up the shapes. I am SO happy with these cookies, and I think I'll add them to my permanent Christmas baking repertoire. Thanks so much for your tutorial!!!
This may sound weird, but the cookies look extremely neat. They look so simple but they really look tasty and professional. I believe it's when she pushes the cookie down to give it a rough shape, such a great idea.
Just thought you could actually make a batch of that chocolate topping and spread it on a sheet then put it to set in the fridge then cut them into chocolate chips for the cookies❤
Great video as always! However, I do have two questions: Can I use spelt flour? I know it contains gluten, but since I don't have an intolerance to it, I don't really mind. And second: could I also roll the dough out to cut out stars and other christmas shapes? Cause that's what I usually do with my christmas cookies. Thanks, lots of love ♥

Hey! Yes you will probably have to use a bit less coconut oil if you only use a "syrup" based sweetener - Just take note that the texture would change if you don't use the coconut sugar. You can also use xylitol sugar instead of coconut sugar :)

Hey! Yes you can try oat flour - these are both medium flours. Just take note that the texture might change a bit, because oats naturally soak up a lot of water. But give it a try, it should work!!! They will just probably be a little less crunchy/ and softer cookies instead.

I tried this recipe and the dough is tearing apart and not crunchy at all, it's almost like "soaked wet", can anybody tell me what could I possibly do wrong and how to fix it? Instead of brown rice flour I only had regular rice flour, could this be the problem?
