We lived in the Philippines while my husband was in the Air Force. We love adobo. Their food is a mix of Filipino, Spanish, Chinese, and some American influences from when we had bases there. Best food ever. Thankfully, I learned to make many Filipino dishes. Try your hand making at lumpia, puncit, and their fried rice.

OMG! I've been waiting for you to try this!
My secret to make the sauce rich and thick is that when the chicken are all cooked, I remove all the chicken and let the sauce simmer and by that you can see the sauce start to reduce and become thicker and when you see that the sauce is thick and glazing from the oil, sugar and soy sauce, put the chicken back in and a little mix mix until all chicken are coated with the thick sauce and tadaaaaa you'll be surprised for the taste!
You did great Aaron for a first timer! 🎉

Woot! Woot! I’m a Filipino living in Dubai. It’s so nice of you Aaron trying to cook chicken adobo🙌🏼👏🏼👏🏼 Ideally the sauce should be thick and dark brownish- achieved when you simmer it for a longer time and the collagen is extracted. However, there’s a variety of ways of prepping it due to influences from Spanish and Chinese cuisines. I hope you enjoyed the taste. Btw, Lucas is becoming so passionate with cooking and baking so how about having more cooking video together? Pettit- Philippines, Ethiopia, Thailand, Tunisia, India, Turkey 😁

The first thing I look at in anyone's attempt to make adobo is if the meat is marinated first. So nice to see that you did that. You might also like to try the more traditional way where you don't brown/sear the meat first and just throw everything into the pot and cook low and slow letting the fat of the meat render out to slowly caramelize the meat. Aside from being easier, it also gives the dish a different flavor .. simple yet more comforting imo. If you wanted to fry the meat after, you can do so.

That was a leveled-up way of cooking adobo. We usually just put all the ingredients in the pot and once it boils we simmer it till the chicken (or pork) is tender. Best eaten a day after cooking it. Oh, and we put more garlic rather than onions. 😉 sometimes we shred the meat (if it's pork) and then fry it til crispy. Good for topping fried rice or just plain rice. Looking forward to more of your cooking adventures! 😋

Next time cooking Chicken Adobo I would suggest make use of a Philippine brand Soy Sauce (any would do). Kikkoman (Japanese brand) has a distinguished taste I would say not for Adobo. Also, to further your culinary taste of Filipino dish, try cooking Bicol Express. It is Pork cooked in Coconut milk,. Add more chili if you prefer more spicy taste. And, Chicken Afritada, a Tomato sauce based dish with Potato, Bell Pepper and Carrots. Thanks for liking Adobo.

Bone-in thighs and pork belly is the best meat for adobo. I use Silver swan 🦢 brand Philippine vinegar and soy sauce. Bundle cost $13 in Amazon. Cup of soy, half cup of vinegar. 10 cloves of minced garlic and a tblsp of whole pepper corn. Half way through, fry the meat with onions and garlic till it’s brown on both sides. Place back in the pot with the sauce. Cook 15 simmer for 10 minutes. Add salt and brown sugar and you’re done. Pepperoncini with juice is the perfect match with your jasmine rice😊😅❤❤❤

To be honest, this Filipino dish has different versions of how to cook it. The ingredients that you mention to put in this dish are correct, and as I have said, some versions of how other Filipinos cook this dish are: in a bowl, they put all the ingredients, such as garlic, whole pepper, corn/soy sauce, vinegar, little salt, bay leaf, and sugar. Some Filipinos marinate it, then pan-fry it, then add the marinated sauce. Another version of this dish is to combine the pork and chicken, which is called chicken adobo. This Filipino dish is one of the national dishes of the Philippines. Anyway, guys, nice job, and enjoy this tasty and savory Filipino dish.

I like a mix of pork, chicken with liver either pork liver or chicken liver. We no longer manirate we just put the meat then vinegar and soy sauce plus garlic/bay leaf/whole peppercorn we dont put onion let it boil till the meat is tender. Put the liver when the meat is almost done. We fry the meat till it is brown and bring it back to the sauce. I like putting boil egg.❤

I love that this has become a food vlog. I wonder if Lucas will go to culinary school. Think of all the great food you'll get to eat. 👍 He's already accomplished and adventurous!

Aaron, I highly recommend you guys to try Jollibee. It's a Filipino fastfood restaurant, there's one in Chandler Arizona. It's the best Fried Chicken in the USA as per Eater. And I think Evie might like their Filipino sweet style spaghetti with hotdog and ground pork.

Adobo is just a reduced stew or sauce made of vinegar, soy sauce, water, lots of garlic, bay leaf, whole pepper, little sugar and chicken liver. Just don't put so much soy sauce and use Philippine soy sauce and vinegar if possible. A little tip we use to combine pork, chicken and liver to make the most savory adobo

You can also cook adobo using pork, or a combination of pork and chicken.

for a start, this is good. should you try it next time here are a few suggestions
    - use Dark soy sauce to get the authentic color and flavor
    - just put everything in a pot add all ingredients- garlic, onion, equal parts white vinegar and dark soy sauce, bay leaf, peppercorns, chili if you want it spicy, or ginger, a little sugar if you want it sweet, let the fat/meat
render until tender in very slow flame... do not add water, it is supposed to be a semi thick sauce not soupy consistency.
    Mangaon na ta! Kain na!
