Jedi don't do much, at least not without a lot if prompting by outside forces, and thus are primarily a reactive agent in galactic events. And the order usually acts as a unified force when they do. Sith on the other hand by their very nature are extremely pro active in their ambitions and goals. Any Sith lord worthy of the title will at least be the grand tyrant of a world, the inventer or perfecter of some horrifying Dark Side technique, and in the greatest/worst cases will plunge the entire galaxy into a devastating war.
Yeah, that's a big oversight. The firestorm of Yavin IV was triggered by the the clash of vast amounts of light and dark side energies, with the Jedi trying to contain and strip Kun of the Force, and Kun trying to carry out a Force drain ritual to escape as a empowered Sith spirit. Instead, he ended up being denied the freedom to move and was trapped within the Massassi temples

Sidious may have ultimately destroyed the republic, but I don’t think he was nearly as powerful as Vitiate. Vitiate after all destroyed an entire planet and used his people’s life energies to allow him to live on for thousands of years, not to mention his immense mastery of the force itself. He was able to dominate and turn both Malak and Revan with just a thought.

The overall galactic story that it tells is what makes it great.
Legends describes it as a Jedi creating an pure wall or barrier of light side energy that surrounds the individual which shields them from the force. However the sith/dark side users have their own means either through raw power or through sith rituals such as when Vitiate used a ritual to strip the force from the entire planet Nathema.
