  • Using a 10lb Boston Butt allow for approximately 14-14 & 1/2 hours for a total timeline from prep to serve. The first step in the process is to determine what is your serving time. Once you’ve determined you’re serving time, you can then back your timeline out from there. Example timeline below utilizing a 6:30 PM serving time (times may vary depending on cooking temperature, weather etc. so plan accordingly).
In this Timeline the Average Cooking Temperature is 250*-275* Bringing the Internal Temperature of the Boston Butt to Approximately 205* and Probe Tender (Approximately 10 Hours).
4:30 AM Prep Time: Meat Prep & Start the Smoker
5:30 AM Cook Time: Put the Boston Butt in the Smoker. Smoke for 7 Hours then Wrap in Foil
12:30 PM Cook Time: At the 7 Hour Mark Wrap the Boston Butt in Heavy Duty Foil. Smoke an Additional 3 Hours Wrapped in Foil Bringing the Internal Temperature to 205* and Probe Tender. Once the Internal Temperature of 205*, & Probe Tender, is Reached it’s Time to Let the Meat Rest.
3:30 PM - 4 PM Rest Time: Take the Boston Butt out of the Smoker. Let the Boston Butt Rest (Still Wrapped in Foil) Either in a Dry Cooler or on the Counter. Rest for 2 - 2 & 1/2 Hours
6 PM Prep Serving Time: Chop or Pull the Pork etc. for a 6:30 PM serving Time.
6:30 PM Serving Time: Serve your Guest

@@BakersBBQ Pretty much, if we are having company over for a weekend get-together or an evening dinner, I always think of the prep time, cooking/smoke time, and rest time. I don't always get it right, but close...lol Have a great day brother!
