    TRINI CHOW CHOW Recipe | Trinidad | Caribbean
    This recipe is a MUST TRY!
    INGREDIENTS:
    2 medium carrots
    2 small onions
    1 cup Bodi/yard beans
    1 cup cauliflower
    1 hot pepper (can be adjusted)
    6-7 pimento
    1 1/2 tbsp salt
    15-18 cloves
    6 tbsp sugar
    1 1/2 tbsp tumeric
    2 1/2 tbsp mustard
    3 cups vinegar
    2 1/4 tbsp cornstarch
    1 tbsp JGM PRODUCTS ginger powder

    This is the 3rd year I've attempted to make chow chow and I must say this is the most flavorful recipe I've tried to date. I did do two things differently though. I omitted the bodi and added carrilie in its place (dislike the taste of boiled bodi) and made a cornstarch slurry to add at the end after the veggies softened to my likeness instead of letting the corstarch boil for so long. All in all this will now be my go to chow chow recipe.

      Do you add vinegar at any point? If yes when and what type?

      @@thandiwalters4507 The 3 cups of vinegar in the recipe is the only liquid you're using. That is what you boil the spices in and add your veggies to to cook them. Just plain distilled white vinegar.

    Hi hi...I just discovered your channel and I love it so far! Quick question though...can I add caraille or cucumbers or even green paw paw to this? I saw a written recipe that called for cucumbers and I was wondering if it would hold up to the cooking process...

      Yes; you can add Kirby cucumbers or English cucumbers not the ines with a lot of seeds.
      Kirbys are the ones use to make pickles and relish.
      You can use bitter melon also.
      Just about any veg you can add.
      Radishes; sweet pepper, christophene (chayote), cauliflower; just about any veg that can be resilient in vinegar.

    Why brine the veggies over night. Why not blanch in salted water.
    Why add the cornstarch to the pot to create lumps to fish out when a slurry can be easily made then add to hot liquid; no lumps.
    You've done so many unnecessary steps.
    Two days to create chow chow?
