Hello~. I am Joconde.
I posted a quiz on a community tap, and many of you guess it right. it surprised me.
Yes, this cake is a three-layer chocolate mousse cake.
This chocolate mousse cake is sweet, tender and delicious.
It is very easy to make as it has a simple shape.
Each mousse layers are made by mixing white, milk, dark chocolate and cream.
The bottom part is a brownie-style cake sheet.
Black cocoa powder was used to give the dark chocolate color.
It's the cocoa powder that makes Oreos.
It goes very well with the mousse and looks great.
I used the Savarin mold from Silikomart, but if you don't have that, you can make it on a 15cm or 18cm round mousse ring.

♥︎Black Cocoa Brownie
13g dark chocolate
28g unsalted butter
24g heavy cream
15g almond powder
24g cake flour
7g black cocoa powder
1 egg (52g without shell)
35 g sugar
♥︎White Chocolate Mousse
62g white chocolate
40g milk
1.5 g gelatin
82g whipped cream
♥︎Milk Chocolate Mousse
62g milk chocolate
40g milk
1.5g gelatin
82g whipped cream
♥︎Dark Chocolate Mousse
50g dark chocolate (57.9% )
40g milk
1.5 g gelatin
82g whipped cream
* After whipping all the whipped cream at once, put it in the refrigerator and use it separately when needed.
However, because there is loss of powder, add 10~15g more than the required amount and whip it.

13g gelatin
162g water
108g whipped cream
43g corn syrup
160g sugar
86g cocoa powder
* I wanted a slightly lighter color mirror glaze, so I used Hershey's cocoa powder.

first i appreciate someone willing to keep the parts that dont go according to plan instead of cutting them. like with making the chocolate look pretty by using a spoon instead of hands and the chocolate ball that made a break for freedom. it made it feel more authentic and like i dont need it to go perfectly to get a gorgeous treat which helps give me the courage to give these a try! and second thank you for also writing the instructions in captions for those like myself who need just that little bit extra info! ^.^

I had to do something like this for an exam, the Savarin mould was a little horror it would not release it, took us quite some time but I also but a thin layer of praline and caramel between each of the moose layers I love watching you bake, nothings rushed there is no commentary you add subtle humour but every thing is spotless.

Wonderful! I want to try it at home ASAP!! But let me ask you something: is it possible to change the gelatine in sheet to gelatine powder? If so, what quantity should I put of powder in it mousse?
