I come from the classical side of music and I really appreciate how clear and concise this tutorial is. Best for people with a bit of piano or theory background.
Tbh, 10 months (and really probably 10 weeks) is more than enough time for you to master this. Just stick with it and practice every day. Do that and you will be doing it without even thinking before you know it.
The incredible thing is that in the intro, you play a really complicated, impressive thing I think I could never do, and then you explain it and when I re-listen to the Intro afterwards, I think "Hey! It's possible!"

Great lesson, Jonny! Regarding the chord progression, it sounds like the first verses of Elton John's "Rocket Man". Is that right or are my ears deceiving me?
I was forced by my parents to take piano lessons from 1st to 8th grades. I didn't like the lessons and the typed of music being taught so i didn't practice. I was taught there and in school bands to play notes off the page. No music theory or how to play parts that I heard on records as back then, definitely no playing by ear, all you had was sheet music where the parts are condensed into the harmony and the vocal melodies. I wish that I'd had this stuff 60 years ago. I'm relearning how to play after letting it go for 50 years.

The teaching is clear and the techniques are perfectly designed for taking my playing as an advanced beginner in jazz, rock, and blues to the next level. Johnny, I am having the best lockdown 'cause of you!! Question - what do I do if the band says we are playing in Bb minor because our vocalist is a diva and doesn't do G minor? I'm comfortable transposing all of the chords but how do I approach those slip notes from Db to C or Db to D since they may end up going a different direction. Do I just treat them as a normal grace note or tell the band that I'm a bigger diva and that for my solo we are changing keys? :))
I wish there had been piano lessons like this so many years ago. It was classical or nothing. With endless and pointless sight reading. No wonder everyone took up guitar instead.

Is this progression technically in G Dorian? Since the g minor scale has an Eb but the C chord is a dominant 7?

What is this progression from a theory perspective? Clearly, its in Gm, yet the C7 suggests the key of F, as does the F bass note in the Gm/F.
