That is a lot of ongoing projects! So impressed with the cable sweater design. Juggling all of the separate cables is a feat. I've done cables in smaller projects and they are not my favorite. Lace patterns are somehow easier for me. Your summer knit sweater that you modeled looks very nice. For socks, you may want to Google sock calculators. They are super helpful for getting the fit right for the weight of yarn. And Ravelry can be useful for finding discontinued yarns. People list their stashes and sometimes will sell or trade. I used that self striping sox yarn to make a baby pullover sweater for one of my grandson's. Only had to use 2 skeins of yarn. I always knit both sleeves at the same time to keep my tension the same. Even when I knit, baby booties and etc.
I had never really knitted a sweater for an adult. But one year, l knitted one for my boyfriend. At the time, we lived in different states for a short time. So I had to guess on his size and sleeve length. It was a basketweave pattern. Drove me almost nuts. Can't tell you how many times I had to go back and correct the pattern. But in the long run, he loved it. And when he moved back to where l was, the weather had turned really cold.
You might start looking for old vintage books from the 40's and 50's for knitted men's sock patterns. That sweater I knitted for my boyfriend was a pattern from the 1950's.
Love it when you show up, totally love your content just keep it natural and it will flow just right 😊. I agree the pinky tweed cardigan sleeve needs to be shorter & collar high on you. I would unpick it to make your alterations or try a new pattern many free ones on "ravelry"🙂

I also tend to knit tight, so I usually have to go up one or two needle sizes depending on the yarn.

I think if you made the sleeves smaller on the cardigan it would fit you better
