    So what I take away from this is that you should follow serving sizes and amount of servings for each day. It is true, so many people exceed serving sizes. Weight can be lost by not over eating and money can be saved. Thanks for another awesome video.

      Yes on both counts. I still eat more like 1.5 servings on most things but I used to eat twice that. I've lost over 50 lbs and am still losing. I feel so much better and am now on less than half the meds I was on back then. I'm scheduled to possibly be off 2 or 3 more by the end of the year.

      and if they are picky about things like Christie soda crackers buy the cheaper one's (I like Walmart's great value one's) and just reuse the Christie box - mine did not notice. They would only eat Heinz ketchup I put the cheaper brand into the Heinz bottle. Thank heavens my kids liked onions - I would use them in everything because they were a cheap extender when I was cutting back on the meat.

    Jill, I watched this video when it came out and found it so inspiring. The next week, my store had 10lbs. of frozen chicken quarters for $3.50. I "processed" the chicken and got 6 servings honey chicken drumsticks, 10 servings for stir-fry, 10 servings for chicken salad, 4 servings for casseroles, and 16 cups of broth including 7 cups of chicken soup and 48 broth ice cubes. I will get 32 servings of chicken, enough for two or three months, for $3.50! I used the oven, the stovetop and two crockpots to make all that. Since it was frozen, I couldn't refreeze it. So it all had to be cooked. But it worked out fine and it was great! Thanks so much for your advice!

    Jill, I shop the same way. Bought a 10# bag of leg quarters when they were on sale for $0.27/#. Each had 14 qtrs. I bought 3 bags. I wrapped each individually in seran wrap then put in a gallon freezer bag. I've got chicken for 6 months or more. Bought ground beef on sale in family pack (5#) for $2.69/#. Bought 2 packs. Froze 1/2# in each bag. Sooooo, for about $35 I've got meat for more than 6 months! I wish some senior centers would teach this to seniors who are on low incomes & think they can't eat good! Just takes a little planning......

    I grew up on something called tomato soup spaghetti. I have yet to encounter anyone else who made this in their family but my dad's mom would dilute the tomato soup with some milk and water. Then she'd add any leftover cheese, like cheddar and American, and melted it in. Then she'd mix it with the spaghetti and add garlic powder, salt, and pepper. Tastes just like homemade spaghetti O's😋

    • @jillcooper172
      @jillcooper172 5 ปีที่แล้ว +3

      Melissa I make something a little bit like that. I take tomato soup add water, spices, hamburger and simmer a few hours and use that for my spaghetti sauce. That is really the only kind of spaghetti sauce I really like. It is so easy to make too.

    When I buy a large portion of meat, chicken, beef, pork, shrimp, etc., I portion them out when I get home and put them into freezer bags before freezing them. It has been a life changer. I take one portion at a time when I want to cook it. Don't have to defrost the entire original package and no waste. I use only what I need with less hassle. Thanks for all your great tips.

    Last weekend I bought chicken hind quarters for 49 cents a lb. for a ten pound bag. I called the store to ask the meat dept. how many were in a bag. He said 6-8. I didn't think I just went to the store and grabbed 40 pounds. Took them out to freeze them individually on cookie sheets and then put them in bags. Well each bag had 12-14 in it. We've got a lot of chicken to eat with just the two of us! I'll use the legs for broth and chicken to can. I just put them in a separate bag and will do that when I have time.

  • @needtoknow1989
    @needtoknow1989 5 ปีที่แล้ว +14

    So true. Chicken can stretch without loss of flavor. For a work weeks lunches. I get a lb of legs. And cook as if I’m using all the chicken in one soup. Then I take the legs out. Let them cool. Divide the broth into 2. Make an enchilada sauce from half. Add a shredded leg and cup of rice with veggies and split that with my sister for meal one. The other 2 shredded legs get divided into 4 portions. 1-chicken enchiladas, 2-flautas (crunchy rolled tacos), 3-mix chicken with some bbq sauce and mash some potatoes, 4 chop some celery and carrots add mayo and have a chicken sandwich.
    I used to be the person that would eat a 10lb steak. Now I buy one and make 5 meals with it. Splitting each meal with my sister so I get about 1lb per meal and don’t feel robbed of meat.
    Some days I just have a salad or pasta with no meat.

Usually, 1 is enough for a meal for me but I have either lunch for the next day or I can take it apart n make something totally different out of that cooked meat. Thanks so much for sharing this with us. Love your ideas.

    At the Walmart I work at in Tullahoma TN they have had whole turkey for sale for 39 cents a lb so I got one. Then they went down to 29 cents a lb so brought another one. Once I cook them I will use them for any recipe that calls for chicken. They are on sale cause the date on them are June. So they want to sale them before they expire. I'm thinking this is probably a sale by date.

      One of my favorite ways to use cabbage is to saute in a little coconut oil or bacon fat and put a weight on top like a cast iron pan to squeeze out most of the moisture. Let it brown some as it cooks down and the taste is even better.

    We eat fried rice with a carrot and an onion, a little bit of sauce to mix in. Sometimes add 1-3 scrambled eggs into it. Super cheap and easy.
    German/Puff pancake- eggs milk and flour makes a whole breakfast with a little butter and sugar.
    Quesadillas- they don’t have to be fancy. Tortillas with cheese or even just some beans and a sprinkle of cheese or salsa are plenty.
    Lettuce wraps- rice, minced chicken, carrots, cucumbers, peanuts- whatever you have that you want to stuff some lettuce with works lol

    Very nice video today. I fixed potato salad today (with the bacon drippings Tawra), shared it with my son and he called later to say that was awesome potato salad. Also fixed chicken salad with one breast (left over from a rotisserie chicken) added a few grapes to it and he said it was so much better than the $10.00 carton he had purchased at Kroger. For that he wouldn't even have to know how to cook chicken. Talk about frustrated...he can and does do lot of things but cooking is not one of them. I hope I live long enough to get him to change his ways but I doubt it. I hope you both had a wonderful Mother's Day and have a Blessed evening.

      LOL I know that doesn't seem like much but I pretty much just add 1-2 Tbsp to a taco for flavor and then with the cheese I added to it I get the protein I need. I do this with stacked enchiladas, chili, my spaghetti sauce, lasagna (once again there is so much cheese in lasagna too) so I really can stretch it.

Winn Dixie had a great 3 day sale on all their meats, stocked up and bought other necessities and spent 189.00 for the month. Will still have to buy milk and such as we need it. Jill, how much potatoes do you buy when they are on sale? How do you keep the potatoes from rotting before you use them if you buy 5 or 10 pounds, since there's just one of you to feed?

    • @jillcooper172
      @jillcooper172 5 ปีที่แล้ว +4

      I buy 10# of potatoes when they go on sale. I do eat quite a few potatoes plus they can last quite awhile for me - about a month. If I think that they might spoil I will make them into hash browns and dehydrate them. I also will fix something like potato soup or slice them with a little butter, bake them and melt cheese on them to use them up. Potatoes have a lot of nutrients in them so I will eat a large potato for a meal often and call it good especially if I top it with a little cheese or crumbled hamburger or ham.

    • @jimmiepatrum
      @jimmiepatrum 5 ปีที่แล้ว

      @@jillcooper172 Thanks much. I don't eat a lot of potatoes, but I will try your tips. Do you keep the potatoes in the refrigerator? How do you keep them from sprouting? I usually cut off the sprouts and eat the rest of the potato, but I still don't eat even five pounds in a month. It sounds like the way you keep potatoes from rotting is by eating them more often than I do. I have diabetes and need to watch the carbs...I do love potatoes, though, fixed many different ways.

    • @jillcooper172
      @jillcooper172 5 ปีที่แล้ว +2

      I don't keep potatoes in the fridge. You really should not because it messes with the starch in them and they can spoil and not cook up as good. The best way to store them is in a cool dark place. In the dark they don't turn green as fast although you can peel that off and still use them. It is good to keep in something like a basket where the air can circulate.

    • @lynhanna917
      @lynhanna917 5 ปีที่แล้ว +6

      I bought a "potato bag" from Avon (breathable bag that keeps them in the dark and it hangs on a hook) and I can keep 10 lbs of potatos for months and I live alone. Never put them in the fridge, they like dark and cool. If they grow eyes you just pull them off if you find soft potatoes peel these and mash them. You can then freeze the mashed potatoes in single servings on a cookie sheet then package the servings in a bag and then use as needed.

    😂 yes I have to buy meat because of my husband. Before I was married I was naturally pescatarian because thats what I liked. I ate cheaper and simpler just some fish and shrimp and different vegetables/starch. Now I have to cater to him too 😅. Weve done the 10lb of chicken quarters at walmart for like $7 and I cut the thighs from the legs and could stretch that out. I would buy a pack of 20lb rice for about $10. Whatever vegetables were available we would get and under $20 we could eat lunch and dinner for like 2 weeks w veg and like a mo w/out veg. Did the broth thing too. At the time I did nit stockpile so we did eat practically the same thing over and over 😅 but when we ate. For $20 bucks at our lowest when neither of us had jobs. As soon as we got jobs we stockpiled. This was years ago so now during covid it was very easy and we just stockpiled further. We eat a lot more varied now by choice but with whole single ingredients and I cook everything from scratch. The only processed stuff is gf whole grain pasta, gf wg bread and crackers and humus. And I COULD make those too and I keep the ingredients but we can afford the convinience for now😂 anytime we are tight we go back to our rice and chicken but w a bit more variety from our pantry. Lately weve embraced a more Meditteranean/Blue Zones way of eating which is basically whole foods but mostly grains legumes and vegetables. And the Mediterranean way if thinking is being flexible w veg so it fits buying whats on sale. We used to think that every meal needs meat but now have embraced simple lentil soups or minestrone soups with any vegetables on hand. Or just pasta with tomato sauce is so delicious especially if u fry some zuchini or eggplant and put it in and can add in lots of fresh basil which I have a plant I bought for just $4 and it keeps giving. But it tastes good without it, pasta does not eat meat. Infact Italians barely add meat to pasta they just add some cheese or vegetables. Rice and beans are amazing if you stew the beans with some onion garlic tomato sauce spanish olives and pumpkin(look up puertorican stewed beans). We can eat rice and these beans and some broccoli and skip the meat. So our stockpile : frozen chicken, ground beef and lamb that was on sale, multiple 20lb of rice, beans of all kinds, lentils of all kinds, dried spices and canned tomatoes/tomato paste. Can do so much with just that. And we too have not bought meat in months, we just built up our meat freezer over time.

    I only spent $25 from Kroger. We are celebrating Veteran's Day tonight, so a bank is sponsoring a dinner. I'm not a veteran, but it's for everybody in this building, it's a lot of fun. All my friends will probably be there. I bought condensed tomato soup, bread and cheese slices for grilled cheese. I have Kale that is good until Thursday.

    Jill, I also have a sealer. When sealing how do you keep the juices from being sucked up into the vacuum part? I have been putting the meat in a sandwich bag first and that works. Thought you may have a better idea . Thank you

      Rebecca B. freeze the meat first on a cookie sheet, then vacuum seal. That will keep the juice from going into the vacuum sealer.

      Put the meat on some kind of plastic wrap or parchment paper., when you put it on a cookie sheet to freeze.

    Maybe it's been done before, if there is already a video please point me in the right direction. But Jill has said she sat down and calculated with a food guide pyramid how much was needed to feed the family , I am wondering if a video can be done on how to do that. I am very interested in implementing this in my family. Thanks so much!!!!!!!

      Eating plant based could help a lot with diabetes and Crohn's disease. It's helped me tremendously with my a1c and thyroids disease. I still eat meat and dairy occasionally but I feel so much better when I don't. It's also very cheap to eat like this if you shop sales and not fall for all of the processed options.

      You cant eat a lot of vegetables with crohns and if you do they have to be very soft. Your diet is very restricted. Its manly a plain diet. Of applesauce, toast, pasta, bread, eggs, and peanut butter. You can eat meats but beef is harder to digest so is lobster and crab. No salami, pepperoni, or sausages with casings.

      Restaurants in the U.S. serve WAY too large portions, imo. The majority of restaurants I've been to in the last 10 years, I bring at least half of my dinner home and THAT usually makes two lunches. I'd truly prefer having smaller portions and be charged less. I recall when Wendy's began "Biggie Sizing" everything and McDonald's kept making their burgers bigger and putting more stuff on it.

    One of my favorite things is smashed potatoes. When I am baking items I will toss in a couple of potatoes to bake. You then take the cooked potato and smash it flat (about 1/2 inch)with a potato masher. when you want to eat you can take the potato, top with some butter or oil, spices of your choice and veggies of your choice and if you want to live dangerously a little grated cheese. You can reheat in an oven or microwave. And if I have any I use plain greek yogurt instead of sour cream. Love the information you provided - I dislike fruit and the thought of having to eat 7 servings in a day ugh but with the information you supplied I could do 2 fruits and 3 veggies although 0 fruits and 5 veggies is better.

    My local Pick and Save (kroger ) had hamburger on sale for $2.49 a pound. I think that's a pretty good deal. I'm going to try to stock my freezer up. We may be eating a lot of ground beef meals for the next few weeks haha. I'm thinking hamburger gravy over noodles and homemade meatballs and tacos and potato soup.
