    I purchased a 250 from Phil last year. Mine is on a trailer. Love it. Cook on it damn near every weekend.

      That's awesome, Chris! How does the trailer run? Any clearance problem with the firebox? It seems to hang really low on some of his trailer builds.

      @@fikscue that’s the one problem. I have issues with the firebox dragging in some spots, primarily in and out of my driveway because of the slope. Other than that I really haven’t had any issues with it. Had some concerns on bracing on the trailer for stability but fixed it with some added bracing on the frame. I don’t go long distances with it so it’s fine for me.

    Awesome. I've got a 250 gallon propane tank that I hope to build into a smoker sometime this year.
    You should do a video of a biscuit test on the smoker to show how evenly it cooks.

      That's a great idea, Phil! I have been putting digital probes during cooks. One by the stack, one by the firebox. They've always been pretty even so far. But yeah, I've always just assumed that the middle part is also about the same. Good luck on you build and thanks for watching!

    Excellent walkthrough on a fine piece of craftsmanship Sir!
    I'm a retired pipeline welder and fabricator, and that's one of the finest smokers I've seen yet. I understand your Pride in Ownership. Great video! Well done Sir!
    I would however, suggest (next time) a slower look at the welds. I see them in passing, but would appreciate a better look at them. All in all, very impressive! 👈👍

    Very nice quality, nice walkthrough... would be nice if there was some kind of grease drain system, most of the high quality offsets have some type of grease drainage.

      Subbed back. Thanks man! I do get better results cooking on the 250 compared to the OC. Cooking principles and fire management are pretty much the same, but the 250 is so much easier to control. It's kinda difficult right now making a cooking video only because whenever I cook on the smoker now is for preparing for our pop up. Super hectic and crazy all around lol. One of these days we'll make it happen tho.

    Hello do you ever get wood ashes floating around or on your meat, if so how do you fix it?

      I did when I was just using the bottom of the firebox. Now that I'm using a coal rack, the ashes just falls down below it without being pulled into the cook chamber.

    Has anyone had or seen Big Phil’s blue smokers? It’s 24 x 48, 3/8 inch steel but no insulated firebox. It’s his “working man” edition. I just pulled the trigger on one. Judging by how other work, I think it should be a good one

    Congratulations on the upgrade. Pecos to a 250 propane tank,damm. $4,000 including shipping, seems like a sweet deal. I'm curious about capacity. So in theory, if you were just doing briskets, how many do you think you could do in one cook? Last thing, now that you're letting the world know you have that " Wonderful toy" I suggest that you figure out how to secure it with some security chain. There are bad people in this world who have no problems taking from the good people of the world so protect your new baby. She's a beauty. Have a great day. 😃👍🔥

      Yea we needed more cooking space for our little popups. I've done 7 briskets the most so far using only the bottom grate, but probably could do 9 max if they were in the smaller 10-12 lb range. The upper grates probably could take 4 more briskets, but it gets about 30-50F degree hotter up top it probably won't be a good idea. This 250 probably weighs at least 1500 lbs, that it would need a forklift to move. Hoping no one crazy enough to bring a forklift out here to steal it.       @@fikscue first off congrats on doing the pop ups. I live in the South Western part of Washington state and received my Washington state business license about a month ago working towards starting my own catering/ food trailer business and am interested in maybe doing some pop-ups this year. Should be getting a phone call from Lonestargrillz any day now for my large IVS. Anyway I have heard only far to often of smokers bigger than yours being stolen. You don't need a forklift, its on casters. They just roll it up a ramp onto a trailer and are gone,takes just a few minutes. So please consider some security solutions. Would love to hear more about your pop-ups. Have a great day.

      @@victorbenner539 Congrats on getting your license. Was thinking of getting the LSG 24 x 60 offset but ended up getting this 250 instead. Almost similar in price, but bigger real estate on the 250. You are right about rolling it out with the casters, but where it is positioned now it's almost impossible to do that as its weight would sink it into the soiled ground (found that the hard way). I also have some sort of security solutions. 😁 Our popups is basically announced on instagram @fikscue, where people pre order for the following weekend and they can either pick it up or we deliver the food to them.

    Never ever ever use a wire brush. It can break the bristles. Those broken bristles can get stuck in your meat. And can cause serious digestive issues in a persons intestines. Great smoker and I love that clear coat.

    Looking to build one of these. What is the total height and width of the throat? And, height from base of cooking chamber to the bottom of throat? Also, I know you said from base of collector to top of stack is 52”, but how tall and wide is the collector where it connects to chamber. Thanks in advance, and that is a beautiful smoker!

      The throat size is 17.5" x 7.5" at the widest of the oval shape. The height from the base of cooking chamber to bottom of throat is 6". The collector is 6" tall and 19" wide. Good luck on your build and thanks for watching Caleb!

      Thanks man! It truly is. Phil's price was the lowest amongst the builders I was looking into. It is a giant leap from Pecos to this, but hopefully the return on investment will cover it soon enough. The draw on the stack is amazing. I can control the temps so much easier on the 250 compared to the Pecos. Temps are even throughout the chamber.

    Beautifully made. I did cry a little at the price.. In comparison over in the UK theres only 1 company I know of here that would build a 250 gallon type smoker, and they sell a 130 gallon for $9000 so a 250 would probably be $15-20k :'((( impossibly expensive here.

    How much more wood does the 250 with insulated firebox use vs the Pecos? Also, what are the dimensions of the firebox? Thanks.

      To cook brisket I wanna say the 250 uses at least about 2 to 2.5 times more woods than the Pecos. But I can also cook 9 max briskets on the 250 vs 2 max on the Pecos, so I can save on wood that way. The firebox is 30" x 30" with a 24" diameter pipe inside it. Thanks for watching, Joshua!

    How do you keep the rust off? Mine is starting to build up some light surface rust.

      I don't think you can keep the rust off if you don't cover it up. You can, however, treat it like a cast iron skillet to take the rust off whenever it builds. I showed how I did it on my 250 1 Year Update video.

    Is the firebox mounted at grate level on center of the barrel

      The top of firebox is about 4 inches above bottom grate. The top of throat about 2 inches below bottom grate.

    What was your reason for a 250, usually don’t see 120s, vs a 500. Is it something you plan to move up to or 250 was a good size?

      I figured 250 was a good size for my backyard and capacity needed for our pop ups. Happy with the size so far. If things keep going well, hopefully 500 is the next upgrade 🤞🏼

    Just curious did you pick out the color of the tank? I was thinking about ordering the same one that you have from big Phil smokers. I noticed you got a mill scale recently. Do you prefer one over the other? Oh also is the big Phil a semi insulated firebox? Thanks

      I picked out the 250 tank out of several options given by the builder. I was not given the option to choose the tank color on the 500, but I told them what I wanted and I'm really happy with what I got. I love both pits, but my preference depends on the size of cook I have to do. Both have fully insulated FB's.

      I do 235 first 4 hours, 250 the next 4, 275 the next 3, 300 to finish.

      @@fikscue are those cooking temperatures for any size brisket, I like your temperature break down of cooking, what made you think of that method? And are those temps based on using a digital temp probe or analog probe? And when do you wrap it, and what total hr mark is at the 300 degrees finishing it?

      @@ignoranceisnotatrend4669 Those are just guidelines for any size brisket. They can be adjusted depending on differing circumstances of your cook (type of cooker, weather, wood etc). I used to wrap at about hour 10-11, but now do not wrap at all the whole cook. Pls check out my latest video on how I currently cook my brisket.

      3 is not many 😁. I only had 1 until I started selling my BBQ last year. Needed more capacity. It all depends on your needs and budget is I'd say. The Pecos is probably the best starter smoker to get imo.

      That's awesome! Which one did you get? This 250 is 10 ft long from the end of firebox to the end of stack collector. 30 in. wide on the firebox. Stack is 52 in. tall, and 7 ft from ground to top of stack.

      I agree! You pay for the Franklin name. Some of the other big named pit builders also has a premium to their brand. Big Phil's quality is on par with those builders, so definitely got a bargain here.

      Thanks, Eric! Phil’s made some reverse flows before, but primarily just traditional offsets. I’ve only experienced cooking offsets on the Old Country’s so i knew i would go traditional if i were to upgrade. Similar cooking principles in just about every way 😁

    Do yourself a favor stop using a wire brush to clean. You could get small wires in your food then your intestines.
