Only I’m adding extra extra spinach because I really love it & my family as well!! BTW Roughly 1-1/2 Pounds of raw skinless, boneless chicken breast meat equals 3 cups cooked. I can’t wait to try this. 🙏🏻🙏🏻

The ritz crackers I would have kept in the bag. Pour in the butter then mixed together. One less bowl to wash. All the recipes looked yummy.

Great recipes I also now buy the roasted chickens and make different dishes and soup from the bones adding some veggies and or rice and noodles. Makes several nice meals.

Yum. Wonderful recipe. Rotisserie chickens are a wonderful bargain. After deboning, I use the carcass to make chicken stock. I can get a yield about about two quarts of quality stock, worth the price of the chicken alone.

When I make the casserole with the macaroni and ranch seasoning instead of the pasta I put in chopped up corn tortillas about 10 of them. That flavor of the tortillas makes it delicious.

I subscribed after I saw the fried deviled egg recipe & I'm so glad I did! This was awesome, Catherine! I've been stuck trying to figure out what to make for dinner almost every night. These are not only easy but affordable, too! Thank you so much for sharing all of them...now I have variety. That one with mashed potatoes, though- yum! 🤤 Hope you have a great weekend. That looked really good, I'd probably use bow- tie pasta, or " broken up linguine" , lol. ( other than the Elbow Macaroni). ... It's similar to Ranch Chix .that my mom would make.
I have made the Chix w Gravy Casserole, I put a bit of heavy cream,and a tiny bit of sour cream in the potatoes...I like my gravy thicker, so I just simmered it for a few minutes on the stove top ,before using it. ( one could also make a slurry to thicken it up a bit, when on the stove top. ):)

These all look SO good that I don't know which to try first! My only problem is that they are way too much for just one person and I have limited refrigerator space. Can you show some recipes that involve smaller portions or tell us how to divide the ingredients to make less? Love your recipes!
Just cut the recipes in half, take all the measurements and cut them in half.
.... you could also freeze them, to have " freezer meals" with the portion you want, and your supper would be ready in no time ! :) Freezer meals usually keep for 1 to 2 months.

Catherine in the chicken and gravy casserole, would it come out well if I leave the raw potatoes diced and bake it, instead of mashing them?
I've never tried it with diced potatoes, I've always mashed them. I think it would be fine you just got to make sure your potatoes are cooked through.
Great recipes, but I would have to use frozen peas and carrots in the first one.
If you put some stove top stuffing on top of chicken & gravy casserole it would be over the top.

Great great video in the last casserole with the mashed potatoes. Can you use instant potatoes and what kind of cheese did you use my son for some reason cannot stand fresh mashed potatoes I don’t know why and she the potatoes be kinda thick or more on the thin side Wait to watch you I’ve been trying to find videos of certain iPhones have Crohn’s disease and my son is Crohn’s has been acting up so bad in the last couple weeks trying to find recipes that are easy and quick, but are also healthy and good for him and me if you have any ideas, could you let me know thank you your Chicago lady.❤️💐🎃

Dear Catherine, I have been printing out some of your recipes and there were no ads, but now I'm having a problem where the ads are everywhere and if I would print it out some of the recipe would be missing and also it takes more pages than usual. Is this me? Even if I delete the ad I have this big gapping space 🤷
