This dish is one of my go-to recipes when my Crohn's Disease flares up. Most of the time, I use the frozen noodles (Reames) for this dish, but I'm good with any egg noodle.

We would cook the veggies a bit first.& maybe cut back at least 1/2 cup of the uncooked noodles, so there is more moisture at the end... without diluting the soup flavor down with so much broth..
Those flavors do sound delicious, and great meal for the warm weather coming!
We like to buy the Costco already cooked/in chunks chicken from their rotisserie chicken for recipes like this, that's in large clear packages..
