Do you use fresh chantarelles and morels? or dried and rehydrated? Either way, good thing to do I think, is to pat dry excess moisture and saute at higher heat!

How do you heat the plate contents after you plated, so the food will be served hot?
You can put the whole dish in oven for some time! We used to do that in several restaurants I worked previously :)
