i never heard of "split" before, this is what i found when i googled it......There are four main reasons that a sauce splits; the fat was added too quickly, the sauce got too hot, the sauce was refrigerated and separated, or the sauce was left standing warm too long. The fat should be added one teaspoon at a time and blended well, or the emulsifying agent gets overwhelmed.
Great recipe, I'm going to make this for some Rock Fish tonight but what I like about this chef is that he actually spends the time to answer everyone's questions...that is rare so bravo for the recipe and bravo for your time..
Chef, question here. Can I use salted butter and omit adding the salt at the end? Also, after making it, should I immediately place the sauce pan in ice water to preserve the sauce then refrigerate & reheat later? 🤔🤔🤔🤔🤔
I looked it up, butter begins to break down at 160 degrees F and completely separates at 190 degrees F. So the key to keep the sauce from splitting is making sure the temperature is low enough. I guess that's why you'd put the butter on ice. That would greatly reduce the temperature of the boiling lemon juice.
Hello sir after reducing the lemon set the fire on low flame and Stat adding the Better..yup the key to prevent spli is your butter is not in room temperature.it must solid and gently whisk whole you adding in pan ..its hard to make for first time .but when you try it again you can make it.

This was such a simple sauce I used it over some red snapper had some roasted potatoes and broccoli on the side had a great dinner! I always used soft butter for my sauces but damn what a difference it made no separation just by keeping it a little cooler crazy when science and cheffing come together

This is a yummy and easy recipe! I left it on the electric burner because I missed the not to turn off once butter was melted 😂 It wasn't as creamy BUT it was still delicious over fish, veggie and rice dish 😋. Will check your other sauce recipes too.
