One hinge per door will work only if you have small or light weight door. Also, with the standard setup of 2 hinges per door, you will have much wider adjustment range for door closing speed.
Those are the adjustment screws. One side screw allows you to adjust the hinge depth (how far in or out the door sits), while the other adjusts the alignment of the door horizontally.
