  • "I say it so often, too often: brine your birds. Brines keep your product moist and tender, but they also can really impart flavor. Brining is one of my favorite cooking cheats. The brine helps to season and maintain moisture, the Jaggery caramel glaze helps then sear the meat, the result is a charred and tender quail.
    Ingredients:
    Banana leaf or segment (a square)
    ¼ cup of jaggery
    ¼ cup of salt
    1 lime
    1 ¼ quart of water
