    Mexican here, in Mexico were dont use trajín for elotes, we use chile piquin, being the one that pica or the one that no pica, altough I dont know were piquin comes from

    Crazy coincidence: the same week you posted this video, I made a Mediterranean inspired version of Mexican elote--with a yogurt sauce in place of the mayo, oregano and mint, feta, lemon zest, and Aleppo pepper

My boss said he doesn't want me using my air fryer and fry pans as much in the office because it's a fire hazard. I need to figure something else out soon. Keep up the great work.

    Omgggggggg SO AMAZING !!
    I'm a huge fan and cooker of Asian foods, all of which I've learned here on TH-cam lol.
    So I understand a lot of things that may Sound Crazy to Others, like Sugar on the Egg toast from the other video etc...but Now for the past decade, Sound Normal to me. Ha ha !!

    What would be a good substitute for the mayo?

      I'd probably make a miso butter. I bet that would be good. Just take some miso paste and whip it into butter. That stuff is legit! It basically tastes like a very savory, salty butter!

    I was wondering what cheese to use for the recipe, until you mentioned just using cotija lol! The lack of cheese in Japan is quite sad 😔 😭

      I'm very sorry Cotija isn't available for you! At the Izakaya I worked at - we used a blend of three cheeses. I can't remember which ones. But you should be able to use any easily grate-able cheese!

    Hey I had question concerning the bonito fish, how big are they? Are bonito fish big ?

      They're about as big as a mackerel. Maybe up to about 10 lbs.

It's really funny you should mention uploading on a schedule as I'm really trying to figure out how to do that right now!
