Vinegar is a great cleaner separately from baking soda, which is also a great cleaner separate from vinegar. - if you combine the two, they will cancel out each other's cleaning properties. (Vinegar is acidic and baking soda is alkaline= cancel out each other.) The fizziness is the cleaners cancelling out each other. Although it looks cool.

For blood and red wine stains use hydrogen peroxide [don't dilute] then spray Vanish Oxi Action Pro on top. Leave for 10 mins then clean with a brush, add a little water, brush again then soak up with a clean cloth or use a wet and dry vacuum if you have one. Repeat the process if needed. From a professional carpet cleaner.

Hi blood gets clean so well with straight hydrogen peroxide no water. The new stuff being sold in stores is diluted so may need to find the right brand.
OxiClean and a drill brush attachment works even better

I had a bag of vegetables rot and turn to liquid on my mattress. I got the stain out but it still smells like liquid green pepper. Any advice? Tried vinegar, baking soda, odoban.

It's been my experience that you will never fully get rid of urine odor from a mattress! The only solution for urine is to buy a new mattress! Waterproof mattress covers are a must!
My youngest son wets the bed a lot, we use incontinence pads, the mattress protectors make him sweat really bad!
Can the hydrogen peroxide clean up the blood stain?
Yes! You can do the hydrogen peroxide method to clean up the blood and urine, then use the cleaning method with vinegar to double down on the stains.
I use it without any other products and soak my daughters clothes It works great. We did use mattress protectors. First the plastic followed by a soft cotton one.

I just wanna find a good video that has the solution on getting blood out of a mattress. I’ve seen about seven different varieties of how you can get it out. This is so frustrating.
Peroxide
Agreed hydrogen peroxide breaks down the color and do it multiple times to do it for big deep stains
Cold water mixed with lots of salt . Pour it on the stain and leave for 30 minutes. Scrub with a toothbrush using circular motion. Repeat process until blood vanishes. I hope that this helps you.
