You can use roughly a cup of water, there is no need to be exact, when it comes to the temperature I would stick to the higher end of the recommended temperature of your yeast as each yeast has different temperature tolerances make sure you check yours out and you can let it cool over time naturally before adding into the fermenter.
Is household sugar ok, I've tried it, does it not have issues as the yeast needs to convert it to monosaccharide first(but rusty on my chemistry) high rate of fermentation from brewing sugar?
That is correct! Essentially yeasts needs to break down sugars into the components monosaccharides as you mentioned. Then it's glucose and I think fructose so that then it can ferment into alcohol. That is why a lot of times you will see brewers actually use glucose, etc. Using household sugars is completely fine but you have to be aware of certain aspects. For example not all yeasts strains may be suitable for breaking that sugars down. Additionally as you probably noticed we really pay attention to dissolve the sugar very well as it's quite important and also we are using our nutrient, it is not a MUST but especially when using household sugar it does help a lot. Apart from that there is not much difference it's just that fermentation with household sugar may take a little longer as it has to break down, but we do not mind - we are home brewers and we have plenty of time on our side! :) If you want of course you can use simple sugar like glucose or maltose but that is choice you have to make for yourself. Most homebrewers won't have access or simply aren't interested in doing so and we do try to keep our videos as simple as it can get while still keeping the important steps in place. :) Hope this helps and thanks for your question!
