Oh yeah, EC1118 likes to go below even with OG higher than that! Nonetheless we will definitely end up backsweetening. We find ourselves doing and trying a lot of different wines nowadays and overall sweeter is definitely our general preference! Few times we did some crazy high gravities with EC1118 just so we don't have to backsweeten at the end but it's just such a high alcohol volume at the end that it may be too much for us. :) Backsweetening is easy enough!

Good kombucha is really good! But yes tea wine is not a bad idea at all! We do not have the second part video out yet as it needs time to ferment but I see the progress and a small spoiler: add little more tea bags if you do it yourself. Otherwise I really recommend it!
No, but it does help so I highly recommend it. Keep in mind that fermenting with household sugar is not usually what "professionals" do and so even that may strain your yeast a bit so it definitely helps to use some kind of yeast nutrient.

Next time just drop your hydrometer right in the bucket. Lowers the risk of contamination.
Good tip! Keep forgetting about it since we don't use bucket that often!
