Little tip folks, before you ground your own meat, put the grinder attachment and meats in the freezer for 30 minutes. This helps keep everything cool, the meats not frozen, just firm enough but still cuttable, and once in the grinder, it won't jam up your grinder.
These look great and I love the idea of using herbs for the buns instead of just oil or butter but in all of my years of experience I came to the conclusion several years ago that the perfect burger must be pan fried. Especially if you're using thinner patties, which I do believe is better. The only exception is if you are doing a thick patty rare to medium rare cooked over a large flame quickly. The juices lost otherwise are not worth the charring. I like some charring so when I discovered this I wasn't very happy. We tend to think that grilling makes everything better so at least for me it took a while to figure out. So, I've never tried this and maybe never will (extra work that may not be worth it) but I assume we can use a torch to heat an iron to redhot temps and put char marks on both sides of the patties before that side touches the pan directly. The beauty with burgers over steak is that you can cook the selection of meat well done while retaining a texture that isn't rubbery or leathery. By cooking the patties on a griddle or in a pan you are also retaining the "broth" within the meat. What I do (because I do like some low sodium soil sauce and or Worcestershire ect...) is take the patties and immediately put them in some foil, add a small amount of whatever salty flavored sauces I prefer and wrap them tightly. I add more burgers as I go while also adding a small amount of those sauces as I go. Those thinner patties will absorb all of the flavors along with it's own juices. If you want to keep it simple (I often do) that last step I'll just throw some salt on them and let them rest in the foil. They'll absorb all of the salt. There's no need to season patties before or during cooking unless it's something like garlic that you want to toast with it. One more thing. I cook them using part of the slider method. That means I cook them on a bed of onions, sandwiched between more onions. Those onions get nicely caramelized while also absorbing everything. Those of course stay with the patties in the foil and on the buns. I hope someone finds this information useful. Play around with it. I assure you that you'll find your perfect burger.
I found that for grilled burgers I can go with VERY fatty meat, I'm talking something like 60/40 (untrimmed beef breast). A lot of the fat will burn off, melt into the meat or drip away, and the remaining burger will be very juicy and tasty. However, if I try to pan fry the same meat, it tastes like pure grease. So 80/20 is ideal for pan fried burgers.
This is a really interesting amalgamation of burger techniques. I had never heard of blending your herbs to make an herby oil for toasting buns. On top of that, adding fresh parmesan to your Oklahoma-style patties is a stroke of genius. And then thick cut pickles to cut all this fat? I have no notes, 10/10 will cook this for myself.

I will honestly say that your method and choice of ingredients is one of a kind.. I can’t wait to try it!
Super chef here, this smash burger is actually tops. Just look at the ingredient placement.
Yeah, my heartburn is flaring just looking at this. Looks delicious though!❤️🔥
People who give compliments like this piss me off especially talking about FLARING heartburn 😂 like are you 60 and diabetic 💀

Keto diet and intermittent fasting stopped my indigestion. Life is better
@@crouchingwombathiddenquoll5641 I do intermittent fasting now too. Haven’t tried keto with it yet, I might have to try that since I’ve had issues with heartburn & acid reflex since my early 20’s.
@@davidbatista1347 my Momma always said - “it’s better to be pissed off than pissed on”😘
The kid's reaction to the pickle was just too real.
You telling us to get the kids involved Inspired me to make the recipe with my cat. We are eating good tonight, thank you sir.
How does your cat taste ? Good ?
@@JacquesMesrine94 Dude no the cat ate the food with me. Little bits of it.
The herb trick is great 👍🏼
It looks absolutely scrumptious! The Bottom bun, though looks soggy, but looks delicious
I had the same thought that bottom bun looked like it was in a puddle, but the smash was totally on point!
10/10 my friend. I love how you make it all from scratch and live of the earth. Keep it coming man!
I'm surprised Just Stop Oil isn't protesting that 😂
that’s pretty funny but i would enjoy your joke more if your planet wasn’t melting
😂
Dang, that truly looks amazing.
It really does
This the one imma make, thank you for incorporating the onions easily
11/10 man.
“You want a pickle?”
kid: “I like turtles” 🐢
1st bite is heaven...2nd bite, you actually go to heaven 😅😂
@@MintLemon-e3o you didnt get the joke did you
Lmaoooo
Nothing in that burger was truly unhealthy. A few more calories than necessary, but the worst thing was the mayo and there was so little of it.
So original bro
That 🍔 is a explosion of flavor 🥹
I think the initial smash needs to be burger directly with griddle to have a better crust. Onions can go on top of the ball before smashing. Otherwise it looks amazing
Yes that is how it is originally made
Parm with Onions on the smash is geniud
Not the evil genius laugh 🤣
9,5/10 This sounds really smart and I will try it. Maybe the best burger recipe I've seen so far. The hint of hard cheese and the herb oil those details sound great. Only thing that doesn't look so great from my point I don't like as much sauce directly over the cheese. Maybe I'd put the sauce and pickles on the bottom bun or I'd add a bit of tomato so the sauce does not directly cover the cheese. Or perhaps bun - cheese- patty - cheese - patty - sauce - gherkins - bun
I knew u were dutch by your accent lol. Good looking burger mate
Yup het is zo herkenbaar lol
Looks great!
Whats the point of burning charcoal to use a flat top on? Lots of guys seem to do this and wondering why?
You probably get some smoke flavor
@mrthompson878 yah maybe but doubt it with the burgers probably cook only 2 minutes max if that, maybe different cook after with the charcoal
Longer and better heat with less mess. Good big chunks of good quality charcoal is the best
I cook my patties over proper fire..
We call it a braai..
Charcoal burns way hotter than gas. Seems irrelevant here, though. Maybe it brings the griddle up to heat faster?
If food didn’t cost so much and take so much time out of your day to make I would absolutely want to make food like this
I love this burger 🍔❤😊☺️😋
Not a lot of people make good food on TH-cam, but this is actually well made.
drooling now
sheesh
that looks awesome
Change the bun for a martins potato or brioche and you have yourself a winner.
Yeah the ones in the vid look droopy and sad
You gotta be careful with brioche. If it's too tall and fluffy, it overshadows the flavor of meat
Brioche makes a terrible hamburger bun. Period.
@@wbfaulk I agree. its great for hotdog buns though
