I came to this video really late (nearly nine months after publication). So this point has perhaps already been made. While setting up the shot, the camera is NOT in shutter priority mode as stated by Francesco. He even points to the A in the upper left corner of the display which indicates aperture priority. This is further confirmed by the fact that when he adjusts exposure compensation to expose to the right, the shutter speed changes and not the F/11 aperture. A constant aperture with variable shutter speed indicates aperture priority. In shutter priority the shutter speed is held constant.
