I completely changed my diet six months ago based on nationally recommended guidelines, but it only made my health worse. It wasn’t until I read 'The 23 Former Doctor Truths' that I realized doing the opposite of what the government advises can actually make a difference. No wonder the doctor who wrote it left their career-speaking the truth often challenges the system!

Dr. Gundry, I grew up on fermented sausages, prosciutto, salami, and the best olive oil in the entire world. My father was Calabrase and my mom was Polish. We also had fermented vegetables and chocolate with the lime dairy. They both live till they were 94 years of age eachand I have never had one team in my life growing up this way. :-) we ate a lot of sauerkraut and my mom pretty much had all the great vinegar also. The salami and the prosciutto and the sausages were all from Italy and were Fran and we’re of the highest quality and I can’t wait to buy Jimi’s product also.

Plenty of Nitrates in this meat. How in God's name can you called processed Nitrate ridden meat the "HEALTHIEST meat on the planet? I contacted the company and after a back and forth email exchange, the person I dealt with said "No Nitrates or Nitrites ADDED" That's the new Nitrates game. Just like Applegate Farms "THE GREAT AMERICAN ORGANIC HOT DOG - NO NITRATES OR NITRITES ADDED" They add things like celery extract which has TONS of nitrates in it to their dogs. This company adds some other ingredient that contains nitrates and/or nitrates in their meat . They can THEN, like Applegate Farms say "NO NITRATES/NITRITES ADDED" and still serve you a dog full of nitrates. SHAME ON YOUR DR. GUNDRY. THIS COMPANY IS NOTHING MORE THAN ANOTHER PROCESSED MEAT COMPANY WHOSE MEATS HAVE PLENTY OF NITRATES/NITRITES.

It's called Lactobacilius Bulgaricus. It was bacteria which used to live only in north Bulgaria, where actually the Bulgariens are the first people who innovate Yogurt and previously they innovated the Bulgarien cheese, today we call it feta chease.I gues it was around 12 century, but could be earlier.

Hey, quick question-where can I find pasture-raised duck, chicken livers, or rabbit in NYC? And where's the go-to spot for top-quality salami, prosciutto, etc., preferably with Lactobacillus Bulgaricus? Should I be worrying about the sodium content, or is it time to just embrace the good life? SOS, send help!
P.S. At this rate, I might just start calling myself a gourmet detective.

How do you ferment cheese? When I make goat cheese, I use the whey from the previous cheese for culture, and then vegetable rennet to make the curd. I have never heard of fermenting cheese,

Feta is an example of fermented cheese. You get a starter which may be specific. Most aged cheeses are fermented, that is what is happening as they age.

Let me tell you that Inuits most gourmet food is they take the skin of a seal and fill it with whole sea gulls and close it for three months. After that time the pate is ready. On the other hand, french country men hang the dead lamb or goat kid from a string, when the meat cuts out and fall, it means it's ready to cook. See their cheeses, traditionally they were not pasteurized. Lots of wild game, wine, polifenols, and fermented products. Creme fraiche is also fermented. Fermentation was the natural way when there were no fridges. It adds lot of acetic bacterias, lactobacillus, etc.

I’m European and grew up eating tons of meat. My grandparents ate so much meat and they all lived to 95-98 with no issues. All of our heart specialists recommend eating red meat. In the states most of the same specialists don’t recommend that! Europeans are way healthier so I don’t see a reason to believe not eating red meat is beneficial in any way! Red meat is healthy, sweets aren’t.

Very true. I was about to comment that most of the world eats tons of meat. Its the culture and mass produced processed food in America that causes the problem. Add in lack of general social structure, eating in your car or while working, rushing their meals and self inflicted stress. Diet is crucial and important but it is largely a North American problem.

@drgundry I must ask, if NEU5gC is so mischievous, then in people eating a carnivore diet we should see a rise in some kind of inflammation marker wouldnt you think? So i must ask, what would this be as people on the carnivore diet usually seem to reduce inflammatory markers not the other way arlund lol

I ordered their brisket and want to share that I am very much dissatisfied with it. First, at least one third of the cut was fat. Really? Brisket with sooo much fat? Second, they sliced it WITH the grain making it very-very chewy. Really, WITH the grain? Unbelievable... That was the worst brisket imaginable.
