I Also of course made the dipping sauce and even made your chili oil a while back and it's already almost done cause I add it to almost all my meals it's Sooooo goooood! Thanks for all your recipes!
Your dumplings look delicious! Shrimp dumplings are my favorite! My recipe is very close where I add a drop or 2 of sesame oil, and I pulse the shrimp in the food processor. I thought putting water chestnuts in them was my secret alone. 😆 Used to make my own wrappers but it’s too much trouble for just one. I served mine with Lan Chi Chili paste with garlic, soy sauce, and vinegar. 😋

Made this last night, they were SO delicious everybody was raving. Ratios worked well, nice balanced flavours. The only thing I changed is doubled the amount of garlic, as I do with pretty much every recipe. Dumplings held together well when boiled. Will be a family favourite ☺️

Classic prawn dumplings. Reminds me of those college days when you have some extra cash to burn for a fancy snack to go with beer on a weekend after exams. Lol. I usually go with citrusy soy sauce and some chili garlic oil but I would love to try the version with Chinese black vinegar - and probably a chili garlic oil with Szechuan peppercorns. It seems like this could be a nice topping on a bowl of fried rice or noodles too. Also, in a pinch, jicama can be used instead of water chestnuts, but this can turn into a crumbly, almost meat-like consistency after being heated for a while (we use jicama for pork dumplings to lighten it up sometimes, especially when the pork is too lean). Water chestnuts retain the crunch so it's always best to use whenever available.
Made these today, didn’t have enough wrappers or time so we made spring rolls with the excess filling. We made the red dipping sauce We had them for lunch today, OMG, stunning. Having the dumplings tonight, looking forward to them heaps 😊

I didn't have Chinese vinegar. BUT I have been LOVING my dipping sauce. Made with basic staples and to taste I put: soy sauce, lime juice, rice wine vinegar, red chili oil, garlic, ginger, green onion, a little sugar or brown sugar, Thai basil, and a tiny few drops sesame oil. SOOOO good

I believe my drool spilled over that bowl of dumplings of yours. That has to be the ultimate midnight snack if a person is smart enough to make extras and put them in the freezer. Twenty of those little darlings would hold me over until lunch.
I find putting a bit of the dumping water in the sauce makes it less heavy. 'Cause otherwise, all you taste is salt and vinegar. Plus the heat "cooks" the liquids a bit and brings everything together (and helps the sugar melt 'cause otherwise I'm stirring for days lol).
you can always "cook" the soy sauce a bit to get rid of the rawness of it. Adding water to the sauce is a huge NO. just like pasta sauce, they SHOULD be overly salty when tasted by themselves. because they're supposed to be tasted with starch, which is quite bland.
These look so yummy!!! I definitely want to try and make them. might have to scour the Chinese supermarket, as most of the ingredients are not readily available in stores where I live. But it'll be worth the trip, for sure!
