You're better off asking your butchers to throw the chuck and the brisket together and then grind it. That way you get an even consistent mix without any overworking of the mince ;)

My last girlfriend made porta bella burgers once. Holy S were they good. I was a little hesitant at first but when I took that first bite I had the look Sam has when he takes the first bite of his tasty looking kids. Man, was it good.

@@rickbelknap No mushrooms on mushroom. Straight up porta bella sammich. I don't remember what condiments were added to it tho. Experiment. Try a few concoctions be they come over. See what's good. Maybe add some mayo or cheese. Mmm, cheese. It goes with almost everything. Maybe some jalapenos would be good if you/they like a little heat. All I remember it was a very good sammich. She fried them up in a little olive oil.

Year later but a major defect of this is how do you keep the guac from sliding off the burger, plus it slides to the edges meaning that center bite is going to be guac deficient . I think an improvement would be to either carve out a divit into the bun before toasting or bread and fry the guac so it holds together
