Becky this is such a genius idea! I did this about 6 months back and it is such a game changer for garlic users. love, Love, LOVE having ready to go real minced garlic in the freezer. Do you do ginger the same way? Do you peel it first? I hunted for a ginger video but couldn’t find it. You’re an awesome young lady Becky. You teaching this 66 yr old lady new things!
Becky, your facial expressions are priceless!! When you taste something, make a mistake or almost drop something, it all shows in your face and this 71 year old grandma LOVES it!! Your videos make my day. LOVE hearing the little man in the background!! I can't wait to see the garden come to life. So glad I found you. Have really enjoyed your content over the past couple of years.
I agree 💯! I’m almost 65 and just love watching your videos. I’ve even learned new things. You have such a wonderful family and extended family. Keep doing what you are doing as it brings joy to so many. I too am looking forward to the new garden, greenhouse and chicken run. So excited for you, Josh & Baby Acre.
Yes, I agree with you on this. Becky it's so fun to see your reaction when you taste something that's good or almost drop something and I really love hearing little Baby A talking to you :).
Right! I spent this morning watching the planting video and got a few more seeds done, now I'm headed to break out the turkey roaster to get tomato sauce started! Love me some inspiration from Mrs. Becky!
Becky your filming and editing skills have improved so much. I love the way when you go from room to room, the camera is already there when you come in. It makes us feel like we made that journey with you. Also when you change the position of the camera. It makes it really interesting. Well done. I'm sure it take heaps of time to make all that happen. You have become quite the pro at this. Thanks for all the time and effort you put into each video.
With the garlic you can also put the whole lot blitzed into a freezer bag, push it flat and lay on a tray, then use a ruler to indent a grid onto it, freeze and then you just snap off a square from frozen when needed. Saves time on the scooping and takes up less space in the freezer.
I love how easy you share your life and your work I am 82 years old and I use to have a garden every year and canned everything. I made all the jams and tomatoes, I even made beef stew and pressure cooked. I could go on and on. I love watching 🥰🥰U Phyllis
Hey Becky :) Can you do a "Making the most of your freezer" video - explaining what freezer burn is and when it happens, and listing everything you can freeze that most people don't think you can. i.e. things like butter. And also showing how you prep different things for freezing. Thanks :)
It would be great if you spent one episode, showing us how to make artesian bread and garlic knots. I have to say I was just disappointed that you skipped, showing us how to make the garlic knots and just showed us them after they were already made. I really enjoy your episodes.
Who says you can’t teach an old Nana new tricks? I have learned so much from you and am putting all your information to work! Thank you so much for everything you have taught me ☮️💟 Nana
My mom used to blend garlic, onion, parsley, eschallot together and keeps in the fridge for seasoning meats before cooking. I really need to do it too.
I do something similar with roasted peppers, garlic, onion, and whatever other veggies I want to add that time. Then I freeze them in small containers until I need them for ground beef for chili, cottage pie, spaghetti sauce. etc.
@@pmbramucci1056 I chop onion, garlic, bell peppers and put them in mini snack ziplock bags and freeze in a large freezer bag. I often add celery to some. They are my most complete seasoning in a PKG.
My grandmother's hard and fast rule when making jellies, jams or preserves with blackberries or blue berries was always use brown sugar instead of white sugar. She used white sugar when making her other jellies etc, but said always use brown sugar with the dark color berries. It really does change and enhance the flavor.
I just read/saw somewhere online about wrapping full heads and cloves of garlic in a moist towel and microwaving it for a minute. Then when it comes out the cloves just slip right out of the skins with a gentle pinch. I tried it and It Works! So cool and saved time. 😊
I love that you left the food processor struggle with the lid in the video. I struggle with my blender all the time, lid position as well as how to put it on the base. I watch your videos almost every day. They're very inspiring, and it's really nice to see someone be real and genuine. (:
I struggle getting my kitchen aid bowl locked down. It's lovely when it comes loose while it is running. I love watching Becky. She leaves the struggles in and goes with it. I'm thankful she was not wearing the baby! He is growing like a weed isn't he. I love hearing him babble in the background.
@@terridantzic4361 I too was so grateful that the Baby was not in the carrier! Whenever she is cooking with him I’m extremely worried that something hot will splash on him.
Sometimes I have to get my husband to assemble my food processor. I feel so silly about it, but you have eased my mind and I know I am not alone. The struggle is real!
I was at Sam’s club last weekend, they have a 3lb bag of peeled garlic for like $10-$11, totally worth it! I preserved it the same way you did, only difference being that I used a silicone mini muffin pan instead of the cookie scoop. Great minds think alike 👍🏻

I finally did a cooking day fully inspired by your old breakfast freezer meal video. 🎉 My family is loving everything! Baked oatmeal, breakfast casserole, 21 breakfast sammies, 10 breakfast burritos, and 30 waffles to toast (made individually cause I only have a single🤣). The mess was award worthy and it was so worth it! I took several notes after watching your video a couple times in order to get the timing more planned out. Thank you for inspiring us daily girl!! 💕
Hi Becky, I am from Houston, TX. Thank you for all your hard work and videos. Don't forget to do some self-care. You are a busy and impressive young lady.
Hi Becky! I’m from Ontario Canada. Putting food outside to cool is something I’ve done for years! I tell the family it’s in ‘God’s Fridge’. Thanks for all the great canning advice. I’ve just started canning last week and was going to do some chicken broth today too!
I put some whipped cream on the deck (on our acreage) and a stray cat enjoyed it immensely! I even had set a plate as a cover but he just knocked it off. 😝 We started feeding the cat and he stuck around for months even though he didn’t allow us to touch him.
Love it. Baby boy can chime in any time. We love hearing from him. 💜 Lol Garlic is a pain in the butt to peel. I am going to try growing it this year. Will see how it goes.
I am so impressed with all the ways you have preserved garlic, not only this episode but past videos too! You do a fantastic job of preserving food and stocking your pantry!!! I've learned so much from you!! Thank you Becky for taking the time to teach us how!!

Thank you for this video. I went to Sam's and purchased a bag of garlic that I will be processing tomorrow. I have learned so much from watching your videos. I'm Australian/Lebanese. My mother makes garlic aioli which she keeps in the fridge. It is mainly used when eating barbecued (I think you refer to it as grilled) chicken and it is fabulous! We also use the garlic aioli at times in salad dressings and when in need of garlic in a recipe that requires stovetop cooking. She makes the garlic aioli using fresh garlic.
Becky I admire you so much. You cook enough for a large family, plus gardening, food storage, home renovations, etc, etc. Let's not forget you have a baby, too. I'm not sure if you still work at your job. I'm in awe what you manage to accomplish on a daily basis. You're truly an inspiration to your viewers : )
When I was first married, my husband was in the US Air Force stationed on Mississippi. Our church had fund raisers of chicken gumbo dinners. They were donated by a local family who owned a restaurant that had "Tue all you can eat of fried chicken." The gumbo was chicken backs with rice. It was delicious.
I am so glad that i looked up how to make your garlic pucks! I was wondering how you made them. Thanks for all the work that you do, i really enjoy watching your videos! You are and awesome hard working woman and totally give me the incentive to expand my cooking skills!
Becky, I'm always amazed by how much you get done in each of your kitchen sessions. Minimal time waste and everything always turns our looking wonderful even when you may think it's a fail! At 66 I don't have your energy, but you give me something to strive towards.

Hi Becky!!! You never cease to amaze me. Now you're doing it all along with caring for your newborn baby!!! My goodness!!! I wanted to share a lil tip from my late Grandma who was an amazing cook!!! To speed up getting the fat out of the chicken broth , she added ice cubes to the broth and that made short work of it. I'd let the broth cool a bit first, then add the cubes, just so that you dont have to water down the broth too much. Also the shallower the container that you have the broth in, the less ice cubes that you'll need to add. Hope that helps. Big hugs and much love, and sooooo much respect and admiration!!! You are an 8th wonder!!! 🍃🤗😍🍃
One time while on vacation our garage frig came unplugged and all meat in freezer spoiled. We were told to put charcoal briquettes inside and it worked. It took about three rounds and a couple of weeks but it was no longer smelling.
Becky, i enjoy watching you daily. We have the exact same thoughts when it comes to cooking and gardening. You are a joy to watch and an amazing woman 😊
Becky, I love watching your videos. Hearing baby A in the background is so precious. I also get a laugh out of seeing your dogs pop in and out of the kitchen. I have two border collies and they are constantly under foot when I am cooking. I live in Quinte West, Ontario and in the winter, we use our deck just off the kitchen as an extra fridge. I too am expanding my garden this year and look forward to what I can harvest right along with you.
Just found you😊👏🏼Great video, tips ! Your such a great example to young women with all these great food skills! Keep going! Young people need this!❤️😊👍🏼
Such an inspiration for as gardeners and home preservers. I just want to thank you for everything you do, and you excite a lot of us. Keep it, Comin girl!
Ur little one is going to learn so much from his mama an daddy. He’s already listening to ur voice. U are such a beautiful person thank u for letting us in ur home just love it.
Hi beccy, I found out another way of preserving garlic and I do it all the times so easy. I chop the garlic in my mixer with half an onion, put it in a jar put garlic and onion mixed together and top the jar with oil of your choice to cover the garlic and put it in the fridge. And use as needed lasts for ages.so you don't get a smell of garlic in you freezer xx
Food safety experts don't recommend storing garlic in oil in the refrigerator for more than 4 days and never to store garlic in oil at room temperature. Because the garlic hasn't been pasteurized by heat to destroy botulism spores there is a very real risk that you may cause serious illness or death.
I highly recommend getting a pressure canner. I used to freeze all my broths, but getting them out of my freezer left more room for whole freezer meals. Becky totally influenced me so I bought the same digital counter top canner. It is well worth the upfront cost
Becky, this is a fabulous video filled with outstanding preservation ideas. My favorite is the frozen garlic scoops. Such a perfect solution. Excellent job managing your food abundance and your kitchen organization is phenomenal. Take care.
You are amazing. You encourage me to tackle my projects. I’m able to knock items off my list making good use of my groceries and garden harvest. You are a good example for me. You give me motivation and energy. Love you videos.
I use an old freezer as a potting/seeding station for me greenhouse. The inside is still good for storing dirt, seeds, etc that you don’t want critters to get into. The height is just right for most of my projects. I put a large poly cement mixing tray on top of the freezer, fill it with my dirt and pot away! Just finished the first 2500 seed starts early this month. I do about 10000 total plants for my hobby greenhouse business, but many of them will be transplanted from plugs.
Great idea for repurposing. Becky could also use her dead freezer outside for chicken feed storage. I bet she could paint it so cute and no critters could get in.
Nice job with the onion powder! I prefer to store my seasonings in smaller jars. So, if one is dropped and broken, I don't lose the entire batch and still have some left to use.
Not sure what your going to do with the chicken bones, but I cook mine down until they are soft, let dry then grind down to powder. Bone meal for the garden and zero waste.
Also the oil and some salt in the garlic helps preserve it a bit better than without 🙂. So good choice to add the oil. As an Indian, I do this with ginger-garlic paste that we use in a lot of our recipes.
I love your garlic idea. I buy the pealed garlic at Sams and I will have to try that next time. I also highly recommend keeping some of your freeze dried onions not powdered, they are great to toss into recipes. I love them in my meatballs because you get the chunks of onions without the meatballs getting to loose
Becky, I have the same Presto Electric canner and according to the directions water bath canning requires water to the fill line. You are filling it to above your jars as we would with a "normal" water bath canner. Not sure you will get a long term seal on your items
Baby Acre is so so cute when he babbles in the background its like he wants to be a you tuber too and becky we enjoy your videos so much its so nice to always see real people who don't hide there mistakes and love when there successfull . Whenever I watch your videos I am always inspired and greatful of when you include us all when you plant seeds and when your harvesting the fruits of your labour it make us all feel good even those who for some reasons can't plant or sow out anything this year so thank you for being you and don't ever change that
Hi Becky I blitz fresh garlic and then mix in crystal or rock salt and freeze in a container. The salt stops the garlic freezing together, so you scoop what you need.
Baby Acre had me chuckling listening to him 🤣My baby is 38 and she has 3 daughters in elementary school. I look forward to your videos and watch every one of them. You are an inspiration.
Just an observation... Have you thought of taking a short vacation? You don’t seem as joyful as you used to be. Maybe overworked... You are such a blessing to everyone who watches your channel. Thank you for everything that you give... Take care of yourself too. 🙏🏻
I definitely see the anxiety and pressure to produce produce produce…I really hope for her and baby’s sake that she will take a step back and reassess. 🙏🏼
I love your garlic idea. Freezing with oil. I did that with my rosemary last year, had little moulds so put some chopped up in with avocado oil. Froze and bagged. So handy in winter here in Alberta Canada.
Stopping the video just to say how you inspire me so much. I’m sitting here thinking hmm French bread cut in half horizontally smear some thick butter and a bunch of that garlic sprinkle with a little parsley and paprika and a bit of that onion powder and bake until, crispy. And make a couple extra wrapped tightly with foil and then plastic wrap to freeze. Get it out and thaw it partially or not at all before baking. Perfect garlic bread ready when you want it.
May I suggest some sound deadening material around the kitchen for your videos? We used to install radio station studios in 3rd world countries and the nationals very ingenious with little to work with. You probably don't want paper egg cartons attached to your walls or ceiling 😂, but some rugs on the floors would help. Maybe some small carpet pieces on top of refrig and cabinet tops would also really help. Your videos are so inspiring. When I'm done with one, I head to the kitchen to can or dehydrate with renewed vigor. 🥰
Keep the dead freezer . Use it for your chicken food to keep the mice out . lots of farmers use old freezers for horse feed storage. Yummmmmy broth God Bless Kathy
Becky, I’m very grateful for your videos. Because of you I’ve learned a lot from you. I have a garden and some fruit trees. Now because of your videos I’m starting to canning my stuff. Thank you
It was fun watching you use the snow to cool. When we have big family dinners, I would put stuff that needed to stay cold out in the snow on our deck. Worked great!!
Adding to my last post, if you brown the onion to a caramelize them an broil the meat in broiler before adding water, you will get a very rich broth, it add so much flavor to any soup. I also add salt and better to meat before broiling it. Just love your videos
I froze chopped onions one year and my freezer smelled for 2 years. Ice cubes even had a taste of onion 😜. Now you have me wanting to try making onion powder. Love your videos, Becky!
I enjoy having back ups! I am making ghee and jarring it up in 8 oz jars. And getting my Spring flower arrangements today. Loved your video today Becky.
Hi Becky. I learn soooo much from you and you are really appreciated and thank you for all you do on your channel to inspire and teach us. I also loved how your painted floor turned....beautiful!!!
I have been freezing my garlic paste for years, I’ve used all different ways to freeze, but what works for me, since I use garlic a lot, I freeze it in 1cup size inexpensive containers from Dollar Tree and then I get them out into freezer bags, and pull out as needed, and that has been working for me for years, good job Becky!!!!!

You could probably store garlic pucks in a canning jar in the freezer, or in ziplocks inside large canning jar in freezer
Becky, I love you!❤ always look forward to your videos! 🎉🎉 I even went back to see your first video on here! I just have to say you are FUN to watch. I see why you have so many followers! I’m 75 yrs old, and I have lot in common with all your ideas, gardening and cooking! Great job!
I did my fresh garlic like you did. I did buy the big bag of garlic from Sam's. I love all your ideas. Ty for doing what you do. ❤❤😊
How beautiful to hear that angel talk. You’ve come so far from when you posted your first video. God bless!!
I haven't purchased a pressure canner just yet but my entire family is enjoying the homemade broth that I freeze. Thank you Becky!
Wow, you’re a great inspiration, Becky, to use our food in a healthy & productive way! So many great ideas, too! Thanks for sharing 🤗💜🇨🇦
The cookie scoop idea is genius! I’ve seen people do it with ice cube trays but this is so much more efficient! THANK YOU!!
I use mine for meatballs!
I did solid coconut oil and froze into balls. Just throw one in your skillet and start cooking.
Thank you Becky for not editing out the mishaps. I chuckled when you struggled with the food processor lid because I struggle every time I use mine. 😃
Meeeee toooooo!!!
🍃😁🍃
Baby Acre is so so cute when he babbles in the background its like he wants to be a you tuber too and becky we enjoy your videos so much its so nice to always see real people who don't hide there mistakes and love when there successfull .
Whenever I watch your videos I am always inspired and greatful of when you include us all when you plant seeds and when your harvesting the fruits of your labour it make us all feel good even those who for some reasons can't plant or sow out anything this year so thank you for being you and don't ever change that
What a productive day! Loved hearing Baby A cooing at the beginning! So sweet. ❤
Hi Becky I blitz fresh garlic and then mix in crystal or rock salt and freeze in a container. The salt stops the garlic freezing together, so you scoop what you need.
with all the chickens wandering about , I worry about that bowl of broth outside with no lid. Enjoyed the video .
Love hearing Baby Acre talking to us while you are doing your thing.. Sounds so sweet. 🥰🥰
I love your garlic idea. Freezing with oil. I did that with my rosemary last year, had little moulds so put some chopped up in with avocado oil. Froze and bagged. So handy in winter here in Alberta Canada.
All the things you are able to accomplish, Becky, with a new baby is utterly amazing!
This week I have made your biscuits recipe and chicken pot pie with biscuit topping was so tasty , thanks Becky ❤
I made chicken and-a bicuit last week too ... good comfort food ... hubby loved it too!
I sure enjoy watching you preserve foods. It’s such an amazing process. I can tell you really enjoy it too. Thank you for your great videos.
I’ve been doing a lot of freeze drying of my broth, beef chicken, turkey condenses it down takes up less space, and super powerful as far as flavor
Love hearing your little guy coo during your voice over. It is so precious and sweet.🥰
I like the freezing small scoops as an alternative to freezing in small ice cube trays. 😁
I love that you keep everything so real in your videos. Thanks for sharing.
Oh yes! It'll be just so absolutely yum! 😊
Make blueberry pie filling, wonderful when you need a pie in a hurry! Can also use for fruit turnovers, cobblers etc
Becky, when my freezer died I wound up using the old freezer as a worm bin. It makes the best worm castings!
You make canning and preserving not look too complicated and much more manageable and worth while
Thank you. Enjoyed it.
Keep the dead freezer . Use it for your chicken food to keep the mice out . lots of farmers use old freezers for horse feed storage. Yummmmmy broth God Bless Kathy
I use my old one for that. Best thing ever!
After losing a Shetland pony and her foal, who got at their feed, that's what my dad ended up doing.
Becky, I’m very grateful for your videos. Because of you I’ve learned a lot from you. I have a garden and some fruit trees. Now because of your videos I’m starting to canning my stuff. Thank you
I’m in awe of all you’ve done. I hope to be able to do even some of what you’ve shown us. Thank you so much. I’ve learned a lot.
I crave these kitchen Videos, yes and also the videos from the homestead. Everything with Josh. And baby stuff. Garden and A LOT OF FOOOOOOOOOOOOOOD
The cookie scoop for the garlic is genius! I put it in ice cube trays but I like your idea better.
It was fun watching you use the snow to cool. When we have big family dinners, I would put stuff that needed to stay cold out in the snow on our deck. Worked great!!
Becky, Love it when you include your family... And hearing the baby talking Is so special!
I vacuum seal my chopped onions and have no issues with that anymore
You inspire me so much. My family and I ha e eaten every meal at home for the past 3 weeks. I am so proud of us!!
I enjoy having back ups! I am making ghee and jarring it up in 8 oz jars. And getting my Spring flower arrangements today. Loved your video today Becky.
GIRL YOU MULTI-TASK SOO WELL
Is anyone else impressed that she didn't get a drop of blueberry on that lovely sweater? 🤣😂🤣
Becky is awesome!
Or the mat!
Hey Becky, long time not seen. After you got your baby I was kind of feeling like giving you some space 😊 cause I know what having a newborn means. I hope you enjoy every day as a mom and thanks for your videos
What a great idea for the garlic paste, definitely something I shall do with mine. Thanks Becky.
