Love this. I was in the Crumbs and Doilies shop last night just before closing and everyone was so lovely! I had a really enjoyable experience and can't wait to go back soon! And obviously the cakes are incredible. I would definitely encourage people to go in.
I use non sticky baking (oven friendly) paper under the dough and right after bake I turn over it to another baking paper sheet. To take the baking paper out I spread cold water on sheet using ice cube. The paper goes off very nicely almost leaving no dough on it. The same effect comes if you boil eggs and want your egg shell to be easily pealed. When boiled you just change your hot boiling water to a icy cold water for couple minutes. Using baking paper, you don't need to mess your baking tray for dough, butter or flour. The turn over also is more easy with paper. When you have turn your cake to another sheet, you can use the baking sheet underneath for rolling. Remember to cut thinly the edges on both sides before rolling. Its also very handy to cover your roll in sheet to a fridge while your quests comes. If you don't want your cake to brake the best way is rolling when it's still lightly warm. Then you don't need to pre-roll your cake. You just have to be ready and fast with filling.

I made this yesterday, It was really good(first time making a rolled cake too). I couldn't make the dots but I made the rest, using up my jam and whipped cream, yummy recipe! Unfortunately, I have to look up the conversions but that's alright.

She used vanilla bean paste which is much more, as you just said, thick and syrupy. Im pretty sure vanilla bean paste is a combination of water, sugar and vanilla bean, so you get those specks of vanilla... Im also pretty sure it can be found in any specialty store.
