Pili Pili Mogo | Cassava | Mihogo

  • Ingredients:
    50g of dried red whole chillies
    Water
    1kg of mogo (cassava)
    Salt to taste
    4 medium sized tomatoes
    Cooking oil
    4 tablespoons of finely chopped garlic
    4 tablespoons of finely chopped ginger
    1 tablespoon of black pepper
    1/2 tablespoon of of honey (twice)
    1 diced onion
    1 diced green pepper
    Half a lemon
    Method:
    Soak the dried red whole chillies in water overnight.
    The next day start the cooking process by boiling the mogo in water, adding some salt to taste.
    Once the mogo has boiled it should become soft.
    Cut the mogo in small cubes and deep fry them in cooking oil until they turn golden brown and crispy.
    Blend the soaked chillies, adding around two scoops of the water used to soak them.
    Slice the tomatoes in half and blend them into a puree.
    Add four tablespoons of cooking oil in a wok on medium to high heat.
    Once the oil in the wok has heated, add the chopped garlic followed by ginger.
    Sauté for a minute or two before adding the previously blended tomatoes.
    Mix well and cook until the oil starts to separate on the sides.
    Add two scoops of the chilli paste, black pepper and salt to taste.
    Mix well and wait until the mixture start to simmer before adding in half a tablespoon of honey.
    Add the diced onions and peppers before mixing well followed by a quarter cup of water so the mixture doesn't stick to the bottom of the wok.
    Add another half a tablespoon of honey, squeeze in the juice from half a lemon. Mix well.
    Finally add the previously fried mogo and mix well.
    Serve while it's hot to enjoy all the spices.
