Looks like it'd go perfect with any sort of curry or other spicy/saucy meat dish. Nice thing about them being flatbreads is that one proof is all you need too. I'll have to try these.

What’s a coincidence? I’ve just had homemade flatbread for lunch they are so versatile I like using them as a pizza base. I use fat free Greek style yoghurt, SR flour, and baking soda no yeast or anything else pinch of salt and whatever flavours I fancy. Mix with hand and use immediately or store in fridge.

I make flat breads all the time and probably the opposite of what you should do, I throw mine into a baggie and freeze while still hot. If its a hot day, I wrap them in a tea towel.and thaw in the sun Otherwise I thaw then bung in the microwave for 20 seconds.

The warm water should be at a temperature that you could bathe a baby in, smile. Warmer than that but not boiling killed the yeast somewhat

Mine are not fluffy like that. I think I do everything like yours, but I have a SS pan.
I found that a cast iron pan works the best. Did your dough rise nicely during the proving stage?
@@Kitchensanctuary Yes it did. Just the cooking. So maybe I need a cast iron pan. Probably holds the heat better.
I use a non stick tawa I bought at an Indian supermarket. Its flat with low sides so much easier to flip.
