    Jill! Amazing and easy pasta recipe! My 15 year old, who wants to be a chef, opted for the “on the counter” method and we had a blast. Don’t have a press so we used a rolling pin and it went so well. We also did the pesto recipe in your cook book, YUMMMM. It was a hit! I retire in a few years and am honing my skills, with your help, for a modern homestead! 😘

    For the hand thinned dough, roll it into a log, then it's much easier to cut into long strips. Just be sure to flour well first or it'll stick to itself.

      I did both methods the only thing with the log method is if you want tinny cut of pasta it can be hard to get that with the log method

    I have been using this same recipe for 45yrs. I use my food processer for to mixing. Good recipe, good job on the video.

    I just got my cookbook a few days ago and it’s been a real thrill! I’ve made the honey caramel corn, the cast iron skillet bread, the sweet cream butter, and buttermilk ranch dressing. Everything was delicious and was given high praise from my family. Tomorrow’s supper is steak bites with mushrooms, roasted garlic butter, and crispy potato stacks. You did such a fantastic job on this book... often cookbooks come and they go, but I will have this one forever. Thank you!

    Haven't had time to make noodles in years. This looks excellent.. 🥰
    My mom came up with a gluten free substitute that has worked for every thing we've tried.
    For every one cup of wheat flour use half cup each rice flour and cornstarch. Add an extra egg to hold it all together. And leave out the salt. For some reason forgetting that has made it turn out better.
    Forgot, if it's something that makes a batter leave out half the water. 🙂

    Thats is so awsome. I was just telling my hubs that I wanted to make some pasta this week. He didn't bleive that we could make them without a machine. My dollar store pizza cutter has never let me down in 10 years.. Sometimes its just luck I guess.

    Trick for hand cutting noodles...when dough is rolled thin, flour the surface and starting with the short end, roll the dough into a log...then cut noodles of preferred width...easier to cut and can be more consistent without tearing. 🤗

    For best results instead of all-purpose use 00 farina that is intended for pasta making. It’s ground to powder fine and contains the right amount of protein for the best pasta. It can be found on Amazon in the U.S. and will have an image of pasta on the bag. I use a mix of 00 farina and semolina. This is the method I learned in Tuscany. Using all-purpose will “work” but the pasta will never reach that higher level of the best pasta.

    Just started making pasta AGAIN...Did mine in a bowl just like you....have that pasta machine...great results.. next time I used my food processor and success again... relaxing time, especially now.. I even froze in nests and still wonderful..added to homemade chicken soup..yummmmm..nice video❤️

    That looked so yummy! I am hungry for that! I always made homemade noodles for our kids and just rolled them out right away, boiled them right a way and just put butter on them....kids love them! And there was no " pretty" noodles....I use a pizza cutter....the kids would fight over who got the longest or fattest noodle.... honestly the really wide ones r so delicious! A great cheap kid friendly meal! Thanks for reminding me about these...I am running out of ideas for meals....dang being home all the time....that's a lot of cooking 🤗

    We found scissors work great for cutting pizza, I never liked our pizza cutter but I did get a pasta machine for Christmas and I'm looking forward to trying this recipe 😊

    I learned how to make Pasta from an Italian Nonna. I put olive oil in my dough and I also put sourdough starter in my dough. Sourdough starter makes carbs easily digestible as it breaks down the sugars so it doesn't sit for a long period of time in the stomach as it is turning into chum

    We love some homemade noodles around our place too. Thank goodness for pasta makers! It is a godsend. So much more efficient than the old school way, but I learned from that method first. Our families expect dinner everyday?? LOL 😂

    Okay, that was great. My daughter and I laughed and learned. Thank you, we needed that. So that is what is for dinner tonight! I think somewhere in the barn is the pasta thing-a-ma-jig you used. Hubby picked it up at a garage sale or something and I wasn't ready to tackle it. If not, I'm using the rolling pin. PS, I do own your cookbook! Was planning to do your potato-sausage soup...that will be tomorrow...change of menu. (I did try once to make pasta on my kitchen aide. DISASTER! My mom lovingly gave me the pasta maker. It's a funnel thing and I had a globby mess. Ended up rolling it out....too thick. Decided that as a home school mom and gardener/farmer {homesteading wasn't in the vocab 15 years ago} I just needed to be content with store bought.) Love your videos!!

    I’m going to make fresh homemade fettuccine. If I don’t want to be cooking by my company is here how long ahead of time can I make it? And if I’m leaving it on the counter how do I leave it on the counter do I need a damp dishcloth? Or am I better making it and then freezing them into little bundles? Thank you awesome video!

    Three broken Pizza cutters? LOL! I finally went to a restaurant supply and bought a commercial pizza cutter. Best money ever spent. So easy to resharpen, as well. I'm sure you have a belt sander on the homestead. Lightly press the cutter to the belt at an angle that will both sharpen and spin the cutting wheel at the same time. You will then have an heirloom!
