    I was expecting meat lunches here but as a vegan runner myself this is fantastic

    Cheers Ben. Here’s one I like: chipotle black beans.
    Fry a chopped up clove of garlic for a couple of mins, add a tin of rinsed organic black beans, fry for another few mins. Add 1 tbsp cider vinegar, 1 tsp honey, 1 tsp chipotle paste, salt and pepper and fry for a few more mins.
    Can be eaten with rice or whatever grains you like or in a wrap with avocado, tomatoes, kale, red onion etc - so good!

    My wife and I found your channel about the time you did Valencia and have been watching ever since. Your dedication and honesty is admirable and inspiring. My wife is doing Manchester but we are both recovering from COVID. I've also had plantar for the last few months. I know I will get back to running, it'll be a bit of a climb but watching your videos and seeing your runs helps with motivation and knowing that I'll get back to it. Perseverance and dedication. Thank you and take care.

      Wishing you both a swift recovery and return to running very soon. Thank you for the kind message. See you at Manchester!

    Say YES to pickle on a jacket potato meal. Just lush. I have to say guys that as someone who earns a living from making TV programmes these are really coming on nicely. Well done to you both. And your running is pretty good too ;)

    I'm naturally gifted at running. Never had to eat certain meals.. hydrate heavy or have special running shoes. Been running since 1995-current(2024).

    Just got back from a wet wellie walk with the kids, who took part in todays workout. Got home to the beautiful smell from the slow cooker, veggie stew with sweet potatos, carrots, celery, cauliflower, brocoli, onions and garlic and some extra herbs mixed in. We will add some lean lamb later when it's ready. Yum

    I know this has been said but had to agree! I work somewhere that's often cold and salad doesn't quite do it so did the soup recipe today (excluding the Tofu) and it's been fantastic. Kept me full all afternoon, and I felt much better for having a warm lunch, thank you.

    Avocado split in half with cottage cheese in the middle, with salt, pepper and olive oil. Very good post-run.

    I tired the tomato soup, tofu, kale and rice today. I liked it! I cook with whole foods, but I’m a very simple cook in terms of prep work, it has to be minimal - and that is absolutely in that zone. And it was nice. I’d never have thought of putting rice into tomato soup. Thanks for the suggestion!

    I'm going to try the falafel wrap this week! (And I'm probably going to use a meat cleaver to prepare it! 😆) Eating whole food plant based meals is something I'm always wanting to move towards, but it seems so difficult. That one looks especially easy and delicious!

    You know baked beans have a very high sugar content?!

    • @BenParkes
      @BenParkes  3 ปีที่แล้ว +3

      Half a can is about 10% of recommended sugar for the day… (well says the NHS) so guess it depends how much other sugar you’re having in your daily diet. Or you can find low sugar versions.. or if it’s a concern then go with something else. We don’t have much sugar generally, so the positives outweigh the negatives.
