In the comics, Magneto used the earth's magnetic fields to regenerate his body. Maybe, that's why he looks the same from First Class to Dark Phoenix.

First Class already pointed out that Mystique's shapeshifting abilities make her age slower than any normal person (she'll still have the body of a teenage girl even if she were 75).
Beast inherited her de-aging ability as a result of using her DNA to create a cure for his mutation.
The serum that Charles used to walk again had side effects like rapid aging and premature hair loss (it's why he already looked like Patrick Stewart in the beginning of X3: Last Stand and X-men Origins: Wolverine). When Wolverine convinced Charles to stop taking the serum in Days of Future Past, he doesn't suffer it's side effects anymore so he remains looking like James McAvoy in Apocalypse and Dark Phoenix.
The movies didn't established how Kitty Pryde gained time-changing powers either but we all went with it and Beast pointed out in X3 that Magneto's powers have limits so he couldn't keep up with the de-aging spell for much longer.
They fucked up their own timeline

Ironic how the first thing we see him do in the "future" is trying to kill a bunch of cops, while the last thing we see him do in the "past" is saving the lives of a bunch of military men.

Magneto stopped Wolverine bone claws
The E and R show Nah what happened in that movie is Wolverine got his Adamantium claws cut off by Silver Samurai robot or whatever & he immediately regrew the claws (only as bone though naturally) but the rest of his skeleton is still metal
