As someone who did mold abatement in AK and lived in a camper that started to develop mold in AK, Mold is a very big concern, especially if you want to be in colder cliamtes, I know I plan on take some extra precautions to help prevent such.
I vote Propane for cooking. Maybe even water heater, backup at least if you go RV water heater. The camp stove will not always be ideal when you want to cook something late at night or early morning in the dark or weather, it just gets old. RV / Bus life is hard enough, make it as easy as possible.

Love the tool de jour. Just installed my ceiling same way you did and I was able to do it myself with two of the helping hands (or third hands) I got from Harbor Freight for like $16 each.
Have you ever heard or used lockbolt s instead of rivets? They look like a rivet on the outside with no dimple or hole in the center, but are stronger than a structural rivet. Supposedly a 3/16 lockbolt is stronger than a 1/4 structural rivet, so a 1/4 lockbolt would be even stronger. Only downside would be in certain areas that the tool can't access the back of the lockbolt, and they're slightly more expensive as well as the tool itself. Milwaukee makes a lockbolt M18 tool, which is basically the rivet tool, and you can buy a conversion kit to change it into the rivet gun. But if you buy the rivet gun, I haven't found a kit to convert it into a lockbolt tool.
The best cure for wet weather mold issues is cedar wood undryed, unfinished. Fencing boards are perfect. Double them up for strength. In conjunction with cedar wood, a wood stove produces a dry heat. A good hot fire in a wood stove will draw the moisture out.
@RichardBronosky Check ✔️ out Wess build videos he uses reclaimed cedar fencing and has a massive wood stove. Addressing the fuel issue cedar makes for good kindling but not prime firewood, burns too fast.
Not that it is much of an issue in a bus but CSST and lightening have caused more than one fire, not sure I would use black iron in a bus but I sure would in a house.
Coating all wood on all sides with Vermont natural juniper infused waterproofing coating then with Caliwel antimicrobial coating against mold growth was my plan of action. I kinda half assed it but that still seems like a good idea for me
