Just to let you know, and it is only what I have been told as I am a "Newbie" at growing sweet potatoes, you are not supposed to wash them right away and you should put them in a shady spot to dry out and cure for a few days. Also I have been told that sweet potatoes don't become"sweet" until a couple of weeks after harvest. Like I said, I am new to this so , don't shoot the pigeon, I am only passing on what I have been told. Anyway, good luck, hope you enjoy your harvest, you have a great crop there. I used my sweet potatoes as a ground cover and after two years I had self seeding and continuous harvest. This year is my first in a raised bed so it will be interesting. Don’t mistake tubers for roots. Put them in a paper bag in a dark place and plant them out when ur ready again

I cook Sweet Potatoes in my NuWave oven for about 25 minutes and peel them and mash them, add butter, cinnamon and honey from my bee hives. really good.

Next year, I would try without the container, put newspaper down and plant the potatoes without breaking ground. Might find even bigger potatoes. But this is a cool idea too
I read that gunny sacks are a good thing to plant potatoes in...roll the bags down, shovel in some soil, plant the starts & as the plants grow just unroll more of the bag & add more soil. To harvest simply cut the sacks open to access the potatoes. I got used sacks from a local coffee company for free!
The container forced them into odd shapes as they hit the sides, but of course they taste perfectly fine. They made up our thanksgiving sweet potato side dish and we have plenty more for Xmas and beyond!

I noticed that your comment was from 2 years ago I was just wondering if you know that now there's a company that sells ugly fruits and vegetables I just saw it the other day come through my apartment complex parking lot delivering some oh they're ugly produce... LOL you get it at a discount so it's all good
I peel, wash and cut my sweet potatoes into chunks and then I put them in a ziplock bag and put some olive oil over them and mix them all with a bunch of spices like parsley, paprika, garlic, onion powder, salt and pepper, ranch powder and a very small amount of chili powder so that you get that mixture of sweet and spicy- I then put them on a cookie sheet and bake them in the oven until they have a nice crispy ness to them and my family gobbles them up!
I could be wrong but I think they got too compacted. Maybe more compost or leaves/ mulch in soil so they dont have to fight to grow. Just an idea. I mean if they can grown potatoes in hay...lol. great job though! Imagine what you will grow next time!!

If I was you I’d grow them in the bed that your buckets sat on! As you noticed they grow toward the top as the roots could spread out! Cover them with plenty of mulch!
You actually have to use the biggest ones to put back to grow. For a better yield next year. You kinda have to sacrifice the biggest ones. That only just makes sense.

I love mashed sweet potatoes. Moistened with creamy milk and butter. Spiced with nutmeg and chives. Delicious!
We love to mash our sweet potatoes and mix them in with regular potatoes as well. Yummy!👍
Dumping out on a tarp will make for easier clean up and reuse of soil easy.
