    Recipe:
    4 cups AP flour
    2 T baking powder
    1 t baking soda
    2 t salt
    2 t sugar
    12 T cold butter, cut into small chunks
    2 c buttermilk (2 cups water & 8 T buttermilk powder)
    If using buttermilk powder, mix with water. Set aside. Mix dry ingredients. Cut in cold butter until “grainy”. Make well in center and pour in buttermilk. Fold dry ingredients until incorporated. Do not over mix. Flour space for rolling. Roll out dough and cut biscuits to desired thickness. Bake at 375 for 20 min or until lightly golden. Makes approx 14 biscuits.

    1, Never twist the biscuit cutter when stamping out biscuits. This will compress the sides preventing the edges from rising properly.
    2. Placing biscuits next to each other so that they support each other while rising during the baking process will allow each one to rise straight without being lopsided.

      Hay, her biscuits looked delicious! I've made homemade BM-Biscuits since I was 17, and I don't know 2 people that make Delicious Biscuits and each one's technique is identical!! Every cook has their own style just like we all have different taste preferences. Her demonstration on "making" scratch buttermilk biscuits was right on, perfect;) To cut each out, as well placing them in the pan.
      To each their own❤️ Made me want some! Excellent tutorial, Honey
      and still sending prayers for you and your precious family 🙏💕🙏

    Love that you bake your bacon (as do I)- makes breakfast much less messy and less dangerous. When I make homemade biscuits (from scratch or from a mix) I roll out the dough into a thick square and cut the dough into squares with my bench scraper or roll it up gently into a roll and lop off my biscuits with a very sharp non serrated knife. Those 2 options make biscuit making go a lot faster and less handling of the dough (and no scraps). I also let them sit on the baking sheet for a minute or so. They always turn out flakey and have great height. God bless!

    Try shredding your frozen butter sticks and you won't need to cut in the butter with the cutter. I coat my butter with flour before grating so the butter doesn't stick. Use the large grate.

    I've watched a lot of tutorials on biscuits and I now see how twisting the biscuit cutter causes the finished biscuits to lean. So, I when I make them in future, I will be sure to resist twisting the cutter. I do love her recipe.

    • @suebean3873
      @suebean3873 ปีที่แล้ว

      It’s not just the twisting that makes them fall, you need to crowd them closely together in a smaller pan, then they cannot fall. I always was told to cook quickly and shorter time in a hotter oven. But these do look good. Whatever works for each of us, right?

  • @peggywhitehead2457

    The reason your biscuits rise up sideways is because you twist your cutter. Just go straight down and dont twist. They will rise perfectly every time

      If you Twist the cutter they don't Rise as High. Place in pan just touching don't cram in pan. When baked remember to butter the tops, then Flip over so the bottom won't sweat. So so Good.

      @karenkissick6884 ปีที่แล้ว

      Place your bisquits right next to each other or really close they will not fall over. I've been making biscuits for 46 years and the very first ones turned out beautiful. I watched my momma and granny growing up and that was my training. I was only 18 and my husband would invite his fellow sailors to supper cause he loved my biscuits and fried chicken. He gained about 60 pounds our first year if marriage cause I could only cook mashed taters gravy fried chicken biscuits spaghetti and steak French fries rice biscuits😂😂😂😂😂

    I have made a lot of biscuits over the years and this is the BEST recipe I have ever used. I mix up the dry ingredients with the butter in a quart jar and store it in my refrigerator for those super busy mornings. It will last about 4 months. I have divided the recipe in half sometimes, I also change up the size of my cutter depending on how many biscuits I want or need. I use the big cutter to make breakfast sandwiches, the smaller cutter works great for homemade sausage gravy. Thank you so much for posting this recipe and all of the tips. God bless you!

    Yum. I cook my bacon in the oven on a baking sheet covered in aluminum foil. Part way through the cooking time I pour off grease (and save it) bacon sticks enough to foil to make it easy. Then finish till crispy. Oh- pepper too! Thanks for the tutorial.

  • @shamasi1968
    @shamasi1968 8 ปีที่แล้ว +55

    This is almost identical to my recipe except I use brown sugar and helpful hint here..lol I freeze my butter and my cheese grater, then I just spray the inside of my grater lightly with oil and grate the butter in, less beating around with my pastry cutter and it makes it easier to get the butter evenly distributed. .. Great biscuits and it's nice to see this recipe getting around.. Oh and I am completely jealous of your canisters.

    • @Ventura0404
      @Ventura0404 5 ปีที่แล้ว +3

      shamasi1968 See this is the thing about cooking there’s more than one way of doing something. I prefer the way she does it because it does leave some bigger pieces of butter which makes in that section puff up and even better.

    • @bamanolan7482
      @bamanolan7482 4 ปีที่แล้ว +1

      When u use the grater to grate the better, do u still use the cutter ? Or just stir the butter in the flour mixture ? I ask because every time I roll out biscuits they turn out hard. Or tortillas. Tia

    • @ChristmasFerrets
      @ChristmasFerrets 3 ปีที่แล้ว +4

      @@bamanolan7482 If you want some larger bits, cut part of the frozen butter into the bowl, then grate the rest. Don't over knead your dough, the most I knead it is about 10 times.

    • @errriet5254
      @errriet5254 2 ปีที่แล้ว

      Definitely the way to go with using the grater and the oiling method. But I don't get the brown sugar part. It completely changes the flavor. It's a personal preference I guess. I just don't like sweet biscuits

    So I found a recipe for buttermilk biscuits that called for 5 cups of flour, 2 cups of buttermilk, 1/2 c water, 2 packets of active dry yeast and 3/4 c of butter shortning. My first batch of yeast didnt seem to rise. 2nd one did so I got to work... my dough was so sticky so I kept working it and working it... LOL i baked them, they turned out ok, surprisingly.. then I found this, I could have saved my arms, tears, hands, etc. Lol, you make it look so easy. Thank you!!! Loving your videos.

  • @theoriginalchefboyoboy6025

    yep, very nice clear video, easy to follow. Sadly, you can never make enough biscuits - I'm always amazed that no matter how much dough I make I never fill the baking pan!!!
    I would arrange the biscuits to touch each other so they raise up straight, or just not make then sooooo thick (and I do like a thick biscuit...)
    half and half AP with cake flour can make them more tender, too.

    Just wanted to drop you a little message, I played with your biscuit recipe today. I live alone soooooooo I divided the recipe in half. Then I made a test batch. Yum breakfast!!! Well then my brain kicked in (OMG), sometimes I hate when that happens. But today was a good thing. I made another batch, crumbled 5 pieces bacon & 1-1/2 cup shredded cheddar cheese. This time I just patted out dough into a round shape about an inch thick, cut into 8 wedges and baked per your instructions. WOW is all I can say. You are very inspirational and I enjoy your videos very much. I just hate that you are having such a tough time with the morning sickness but the end result will make all the bad things just disappear from your mind. May I just say I'm pulling for team pink. TIP: What I do for my biscuits I put my flower in the refrigerator or freezer for around 15 minutes. Before I cut my stick and a half of butter I roll it in my flower and then cut it into cubes because your knife doesn't stick as much. You can cut it in forts roll it around in the flower as well and then cut it into cubes I just find that it doesn't stick to your knife it doesn't start to soften. It really works out well just a little tip

    Hi there! Saw your channel earlier today. I see you are a fan of Noreen as am I. The comment you were making about cooking the eggs in the stainless steel pan. I don't know what heat level you are cooking them on, but the browning is from the eggs burning from too high of heat. Maybe try turning the burner down next time to mid low and cooking the eggs to a scramble over a longer period of time. Less chance of them burning.

Second, I just baked this for the umpteenth time, but this time with my Great Niece. I was trying to teach her as much as I could of it. Only thing was I forgot that I didnt have any unsalted butter. So, with the best of a educated guess I could muster up, we did it with salted butter. The only thing I did not do was add the 2 tsp of salt that Ashley Hudd had shown in the recipe for you. I forgotten your name, I keep thinking that it is Heather, so if it isn't please for give my negligance... More than anything, I'm just greatly excited that I got my niece to want to do things her being from somewhat a broken home. I just look to try and keep her excited and cheered up on things. These biscuits are my go to... even if it is just for me and my wife. I tried to cut down the Recipe but in my opinion, just wasn't quite right. Anyways, hope you keep striving to live to the best of your ability, we're all here keeping you guys in our thoughts and prayers. Please forgive my verbal vomit. Just excited that I got her excited into baking and cooking.

    Love your recipe. I'll try it, but I would have rolled the dough thinner to yield more biscuit and to keep them from tipping over. Don't twist the cutter. Cut down and pull up and release the dough from the cutter. That allows the biscuit to rise. Otherwise, the biscuit won't rise or, if it does rise, it will fall over. If you scramble your eggs in a nonstick skillet rather than cast iron they won't be overcooked.

    I add my powdered buttermilk to my flour/dry ingredients & stir, then add the water where the buttermilk is called for. No waiting for the powder to dissolve. And yes to grating frozen butter. Agree not to twist cutter. It stops the biscuit from rising properly.

    Heather, if you heat your SS skillet up first, Then put your butter, bacon grease or what ever you use to cook your scrambled eggs in, then let that get hot, your eggs will not stick as much. Your breakfast looked totally yummy! :)

      Scrambled eggs should cook on med or med low heat to keep from sticking. First. don't be in a hurry. The chemical change in eggs must occur slowly and peacefully to produce a soft scramble and COOKED LONGER for a firm scramble. Folks who use non-stick tend to cook on hi and stainless steel has fairly strict rules for how it works without making the cook cuss. Eggs should never be cooked on hi.

    Good grief! I don't think we have even HEARD of powdered buttermilk this side of the Pond! What a brilliant idea. Though I know you can freeze buttermilk, and I know you can substitute with yoghurt, or milk with a squeeze of lemon juice; otherwise you have to plan on using it and making sure you buy some in- not everywhere sells buttermilk. You don't decide on a whim to make something needing buttermilk! Great channel!

      Lynne Gill They carry several brands of dry buttermilk powder @ my local grocery. The one in this video has been around for many years. Just like you I was unaware of this until I watched a few videos a little over a year ago. It works great for baked goods. I use is for cakes and biscuits. Cuts down on cost and can hang around a lot longer in my pantry with out taking space up in the frig. If you can not find this it can be ordered at several online shopping networks. I purchase mine at Publix and ingles grocer ;)

    This is the best video on bisquits, hands down! She handles the dough like a expert!, Yeah she know about twisting and making them touch but these bisquits will be quickly devoured by family, and torn apart
    most recipes use 2 cups of flour, but this is doubled giving you more dough to mead and it's easier to handle with a bigger ball therefore you can make those layers.

  • @peachy75019
    @peachy75019 4 ปีที่แล้ว +1

    Just a hint: When you place the raw biscuits on the pan to bake, have them all touching each other. That gives them something to climb on to rise and you won't end up with any wonky leaning tower of Pisa biscuits :)
