Sir I have problem with thinkspeak, the data is sended by the esp32 and it's showing that the data is send but data is not showing on the thingspeak while entries are also increasing or receiving.

It’s common issue of Thingspeak.
Try it other day. And try today send data every second.

Sorry, I am not using online editor for this. If you try this with offline Arduino IDE, then this will work.

while it is prebuilt with NodeMCU board. While you install esp8266 board in Arduino IDE, it automatically install with that.

Yes you can measure the height of the water tank using ultrasonic sensor.
