I was wondering. Would you be able to hook up a jamma board/arcade boards to this? Or is it just plug and play items like pcs and consoles?

Negative. Out of the box, USB D-Input and X-Input. I think you'd have to look into adding or replacing the guts in there with a different setup. Either wiring in a full jamma harness or looking into something like Brook UFB to JAMMA by Psychic Drive.
