When I was a child my mother used to wrap melon in prosciutto for me as a snack. It was a favorite till I turned 12 and went vegetarian. I can't wait to try this and share it with my 80 year old mother. I'm sure she'll be amazed.

I made a raw prosciutto a long time ago that called for sun dried tomatoes. Maybe a touch of it in the rice paper bath will add to the umami-ness of the recipe 😉

Thinking about trying it with coconut oil as that will harden to an opaque color when refrigerated. Might look more like the fat strip on the outside of prosciutto (sorry to be gross...)

Made liquid smoke with molasses, lots cayenne, braggs vinegar, salt and its “smokier” under heat than nothing-:)
