How To Make Noodles FROM SCRATCH with Bonus Recipe

  • Making Noodles from Scratch! Step by Step (Recipe Below)
    An amazing art that has several different forms. Someone everyone needs to learn, as once you make them yourself, you'll never go back to store-bought. Simple in instruction, fun in technique. Get the perfect noodles with Bao Bei!
    Ingredients: (10 servings)
    - Flour (800 grams)
    - Water (345 grams)
    - Salt (1.5 tsp)
    - Baking Soda (1/4 tsp)
    1. Mix Flour, Salt and Baking Soda into a big bowl. Pour water in increments while mixing the ingredients. Knead the dough pushing down and out with force, alternating sides.
    (Flour dough is very dry and tough, especially in the beginning, it will be difficult to knead)
    2. Continue to knead for 5-10 minutes depending on strength and technique, use two hands if needed and transfer to a surface for more space. The dough will get smooth with a bit of bounce-back, then cover it and rest for 1 to 1.5 hours.
    3. Take it out and knead the dough again for 2-3 minutes, if it's a large portion cut it in half and then let the dough rest again for 10 minutes.
    4. Flatten the dough out with your palms and use a rolling pin to roll a thin sheet (1-2 mm thick). See video for some rolling techniques. Put a generous amount of flour above and below the dough to avoid any sticking. Fold the dough over itself a few times into a rectangle. Use a knife and cut into noodle size pieces. Dust some flour on top and shake the noodles to separate them.
    5. To Cook the noodles, use a large amount of water in a pot to dilute the starch and add in some oil and a generous amount of salt. Cook for 3-4 minutes and.... Done!
    These can store in freezer for a significant time, I just let them freeze on a plate and cover with saran wrap. Just defrost them in the fridge and boil when ready.
    Simple Noodle Recipe (1 serving, adjust as needed)
    - Fragrant Oil (1 tsp) • How To Make Scallion R...
    - Chili Oil (1 tsp) • The Only Chili Oil Rec...
    - Soy Sauce (1.5 tsp)
    - Fried Shallots (Handful)
    - Scallions (1 small diced)
    Add all ingredients with a serving of noodles and mix.... Simple and absolutely delicious!

    -all purpose flower (6 cups)

    -backing soda (1/4 tsp)
    -water (1 1/2 cups)
    1: mix flower ,salt, and baking soda into a big bowl
    2: pour in water bit by bit and stir
    3: need the dough
    4: let it rise for 1 1/2 hours
    5: need it again and let it rest for 10 min
    6: role out dough (to keep away stickiness put some flower on top and under the dough, try to make the dough thin)

      Hey Barnee! Soft wheat flour has a bit too low of gluten content for the texture that you want in noodles. I would definitely suggest using all-purpose for the right consistency and texture!

      Hey rocket! So if you’re having trouble with the first step, a trick you can do is: once the dough and flour and combined very briefly, like it can be clumpy and ugly, just cover it and rest it for 30 minutes. This will loosen up the dough and then you can begin the kneading part again. It’s not the easiest dough recipe to learn since kneading noodles is kind of rough. If you want you can send me photos on Instagram and I can see what you’re doing Incorrectly

      Also! If you’re really struggling you can add a tiny bit more water. Just be warned this will cause the dough to be stickier so use lots of flour when folding and cutting!

    1, Adding Baking Soda will make NO DIFFERENCE at all. Baking Soda is pure sodium bicarbonate and requires an acid such as lemon or vinegar to react. By adding BS but no acid then it's POINTLESS and will not make any difference to the dough.
    2. Adding Oil to the cooking water is POINTLESS water and oil don't mix, so the oil will float to the top of the water while the noodles sit below it will in no way make any difference to this recipe it's about as effective as putting the oil in a cup next to the pan as it's not touching the noodles.
