Noelle would be at the costume fixing station for sure. It might be her first time, but she'll buy a ticket, find people who need their costumes fixed, patch them up, and end up spending the rest of the con being a volunteer helper at the fixing station. You know the girl. Can't go a single day relaxing without finding some sort of work to do.
That innocent bean would totally buy a ticket and totally end up being the Con Cosplay Fixer after the Con is done, lmaoo. I get reminded of all of her story events when she would take a break and end up taking on another job somehow.

Shinobu would be very much into anime and cosplaying but she would also be VERY embarrassed about it and wouldn't want any of her friends to know. So she would wear one of those cosplays that cover your whole face so that no one recognizes her.

Edit: Dehya would definitely cosplay too. She seems tough but she's also very much into girly things. I could honestly see her doing some Sailor Moon cosplays.

I think Lumine or Nahida (maybe Yae told Ei to bring him) probably dragged Scaramouche to the convention so he’d leave the house and everyone thinks he’s cosplaying something but that’s just how he dresses. He’d probably get frustrated with everyone asking what his costume was and go to the arcade and let his anger out on an arcade game or go sit in the AMV since if he pretends to sleep (since everyone else there is) no one will bother him. Then I think Lumine will come show him something and he’ll enjoy the last bit of the convention and maybe even agree to picture. He’d have enjoyed it but would never admit it. Maybe if Lumine’s with Xiao the two of them will just kinda sit it silence like “I don’t want to talk.” “It’s too loud” and just be sitting together pretending to sleep to avoid people.

Cyno was cosplaying as his favorite character (idk who, maybe from Genius Invokation or smth) and is low key super excited, and got Collei excited and they convinced Tighnari to cosplay with them. So Cyno is taking Collei to all the cool stuff, nerding out, having a good time, and Tighnari is like: "Be careful" "Relax" and stuff, but deep down he's having a blast

Considering the fact that i’m attending a Con next weekend, i’m very tempted to try and be as many of these head canon troupes as possible
As of 3.5, my headcanon for Alhaitham's and Kaveh's placements:
Kaveh has an art/crafts booth, while Alhaitham is his bag mule. BUT, a bag mule who himself insisted on going, because he was the one who paid for all the art supplies and booth rent, and he doesn't want it all to go to waste because of Kaveh's naivety. So, he's just sitting there at the back of the booth with a book and in his headphones, but whenever Kaveh's heart melts at someone saying, "Aw, your art is amazing I love it so much! But I just spent everything helping a little kid in the arcades get a toy they really wanted. It's suuuuch a shame I can't afford your beautiful artworks...", Alhaitham looks them dead in the eyes and is like, "Ma'am/Sir, I saw you coming from the direction opposite to the arcades. Plus, they don't give toys as prizes there. You either pay in full or leave."

Cyno is actually in the dealers hall selling ultra rare TCG cards, having like a holographic Klee card, or a one of a kind collectible Diluc card, also has elemental dice that are like made from colorful resin and all that kind of jazz, and not only that, but he would also have like a small booklet teaching you all the rules and tips to become a genius invocation tech player
Also Kujo Sara is big Raiden Shogun fan girl so I could also see her and Keqing basically going over why their god/archons merch is superior OR both of them geeking out a out their archons and intracity of certain pieces
Hc:Faruzan was cosplaying Miku and she kept getting compliments on how realistic her hair was

I can already see Klee burning down the forest while Zhongli shares stories about himself and Venti bringing all the alcohol (Even though there was a specific "No Alcohol" rule on the trip)
I can already see what tiers everyone would be in
Also, my idea for tier lists:
If Genshin characters play Super Smash Bros.
If Genshin characters have pets (categories will be dogs, cats, birds, rabbits/rodents, reptiles/amphibians/bugs, fish, and virtual pets)
If Genshin characters go trick-or-treating (one category will be “got a toothbrush” and another will be “got a Chick tract for Halloween”)
If Genshin characters go to a theme park
If Genshin characters play Pokemon
If Genshin characters go to a water park
Itto, Keqing, and Fischl are painfully canon
(1) Itto already, canonically, has a cardboard cut out of Ms. Hina
(2) Keqing has a hoard of merch for Rex Lapis
(3) Fischl is Fischl

Diluc can also be a toku fan (imagine him cosplaying as a character from Kamen Rider or Super Sentai/Power Rangers (and for the latter, he got to meet a boyfriend and girlfriend pair dressed up as Rita and Lord Zedd)).
Imma go out on a hot take and say that Cyno won the cosplay contest. He didn’t even dress up, everybody was just amazed by his normal wardrobe LMAO (he a Yu-Gi-Oh fan and takes inspiration from that show and nobody can tell me otherwise)
fun fact! did you know that bennett and xingqiu's VA, Cristina Vee, voiced sailor mars in the english dub of the anime. idk if either of them would fit her well ( xingqiu would probably go for it anyways) also mona fits pretty well also.

When you put yae with albedo in the artist alley booths, I had a headcannon where they’re in a random corner in the con building and they’re just selling 18+ books-
Hear me out:
- Klee and Kaeya come with Albedo and are vibing, all wearing some sort of matching cosplays, even tho Albedo is sitting in the artist alley all weekend
-Al Haithem is carrying bags for Kaveh who is a professional cosplayer who is most known for Howl from Howl's Moving Castle.
- Noelle sees all the cosplayers and next con she goes and wins, making Fischl and Kaveh really annoyed and determined to win next year
Xingqu canonically is an author with a pen name, so he could be having his own panel as well

I think Kaeya is a secret pro cosplayer. He even has an alias and very detailed costumes. In the end he tries with Fishl, and she(not recognising him) starts asking around desperate to know who the mystery cosplayer is.
Zhongli is a first timer but accidentally gets pulled into hosting a panel about the pros and cons of idol group anime.
Alhaitham is dragged there by Kaveh. He escapes only to somehow end up in the booths selling manga, wondering what the heck the world is coming to.
