I always keep whole wheat noodles and peanut butter in the cuboard, 2 nests is 17g of protein, fry some spring onion garlic and add a generous amount of peanut butter (like 35-50g) and chilli flakes you have lunch/dinner in 5-10min with around 30g protein and 750cals, i'll eventually try pbfit but atm the struggle is eating in a surplus. When it comes to lentils look for the smaller sized grains they will be faster to cook, red lentils take like 15-20min and a 100g serving has 26g of protein huge. Urid dal (white lentil) takes about 20min and has a more flowery taste but its a super texture similar to rice so i do 50g urid dal and 50g rice per serving for the same 350cals but double the protein content. Swapped out instant rice for instant lentils for the same reason, not to mention instant lentils+bread is a meal, instant rice you gotta cook something protein-y to have with it. Dont sleep on shelf stable tofu either, the silken kind - its basically protein mayonaise.

Raw cashews are an amazing ingredient to have on hand. Vegan mayo, sour cream, cheese, dressing, pasta sauce, it’s probably the most versatile nut. One of the few things I go to Costco for.

You kind of lost words when you came to the rolled oats. 😁. But this is what I did when I made a vegan meat loaf. Instead of using breadcrumbs, I toss in some rolled oats along with the spices and chopped veggies. It gives you a little extra fiber and bulk, and it plumps up from the juices while cooking. No one will know it’s even there. I’ve also suffered from an old knee injury which turned into arthritis in my old age… do I peel my turmeric and ginger before tossing into my smoothies? Nah! Peel and all is fine for me, just wash it. 😂
I haven’t read through the comments. You do need to store your soy curls in the freezer or at least fridge if using quicker. They will go rancid sitting out. That’s no fun when it happens. The freezer keeps them from ever going rancid.
I’ll also add that you can crumble the soy curls and make your own “TVP” without being as processed as TVP. Makes great taco meat or ground crumbles for soups, chili, etc.

I LOVE avocado sushi, and I usually add carrots and cucumbers. To add protein, I love using strips of air-fried (or baked) tofu that were marinated in teriyaki sauce. It's delicious! 😋
@The Vegan Gym You & I would get along very well. While some students lived on Cup-of-noodles, I lived on chips & salsa in college. Sushi is my fun, fairly easy to make dinner. I've switched from sushi to spring rolls recently. Chopping is not my forte 😏

I eat tvp like I would overnight oatmeal. Soak in soy milk overnight then add fruit, agave, hemp seed just before serving. Delicious 😋

Your onions and potatoes will last longer if you don't store them together. The ethelyne causes sprouting/spoilage much faster

Yo for cashews go to an indian food store and get bulk uncooked cashews. 350 degrees for 10 mins and it's much cheaper.
