    Hi Alicia Lynn! I wanted to write to THANK YOU for this BANANA BREAD recipe!!! It's wonderful, and now it's my everyday breakfast!! Much better to have a thick portion of banana bread than a slice of bread with jam on it, and a point less:)...it tastes wonderful!

    I made this with Kodiak to lower the points. It was really flavorful. However, the middle sunk a tad bit. I made 8 slices for 1 point each. Worth it to me. Thanks for the recipe.

      Good idea to use the Kodiak, thanks for letting me know, Jan! The protein pancake mixes work great in a lot of things, I have been using the Krusteaz brand a lot lately. I just filmed breakfast muffins I have been making a lot that I used the Krusteaz in, so yummy😋

    If you calculate each ingredient separately, it does come out to 1 pt. on pts plus.

    I trust you that this is the best banana bread recipe ever! I like a loaf better than muffins too, though I'm more inclined to eat the whole loaf. 😃

    Made this in my 12 cup silicone muffin mold and they're amazing! I just sprinkled a little cinnamon on top with a few chopped walnuts. I'm not on WW and I count my intake as regular macros - mine ended up at 60 calories, 4 net carbs, 4 protein, 3 fat grams ea. I did use a low carb flour blend (Victoria's Keto Flour) which is perfect for muffins. These are going to make a great breakfast for me for this week - thank you SO much! I'll never throw away bananas again! I hate cutting bread loaves so the muffins are perfect. Subscribed and selected notifications; looking forward to trying more of your recipes!

    Easy and Simple are my two favorite words when it comes to making WW friendly meals! It looks sooo good. I just have to get some coconut oil and I'll be making this for sure.

    Alicia, that banana bread looks SO good!!! I can’t wait to make it!! My family loves banana bread! We love it so much, that if we don’t have overripe bananas, & have a craving for it, we head over to a nearby Bob Evans & buy a loaf or two. Which brings up a question, have you ever doubled the recipe? If so, how did they turn out? I’d love to buy a bunch of bananas, let them over-ripen & make as many loaves as I can & freeze them.

      I put in 1/2 cup chopped walnuts and it increases it to 2 points per serving instead of 1.

    What’s the benefit of coconut oil over canola?

      There are health benefits to coconut oil but it is mostly a personal preference for me, I use it in baking a lot. It does make a difference in the overall taste of the baked good if you use enough. There probably isn't enough in this recipe where it would affect the taste though. You can absolutely use a different oil if you want and it will work fine!

      I've never tried it so I can't say for sure. I would guess if you pureed it, it would work.

      Are you talking about something like the Oikos high protein? If so, you could definitely use that or really any Greek yogurt, flavored or plain. I use a plain Greek yogurt in this which is still pretty high in protein, 18 gms per 3/4 cup.

    Ok, Alicia Lynn...I think I know WHY I'm having so much trouble with the bagels. My cup of flour has 130 grams of it. I wonder...how many grams does YOUR cup of flour has? If you don't weight your ingredients, you're probably adding a heck more flour than I do! And that's why, even though they look perfect, when you cut them, the inside is just raw dough, which is disgusting. I now have a NEW COSORI air fryer, JUST LIKE YOURS!! And I used 400 degrees, 8 min one side and 3 the other. Still RAW! So, how much does your cup of flour weight?? Thanks!!!

      My current flour which I believe is Gold Medal, is 160 grams. I would guess different brands of flours carry different weights and I don't use a consistent brand, so my weights on a cup aren't going to be the same every time. That's probably why I get slightly different results each time. If you google what a cup of self rising flour weighs, you will get a variety of answers, there is no set, consistent answer. I'm not a baker and don't claim to be, so I stick with cup measurements most of the time which usually gives me good results. It's what I know and therefore do. I'm sorry you are having the same issue, I really can't tell you why that is!
